How about just instructing her to keep her hands in a set position?
I'm gonna assume the head end of your bed is up against a wall, so you could tell her to keep her palms against the wall untill you say otherwise. That way the bondage is only happening in her mind. Yes, she can move her hands any time she wants, but she isn't doing so purely out of obedience.
If you want to take it further get two plastic cups and put something small like sequins or ball barings in them. You instruct her to hold the cup horizontaly against the wall so that the opening at the top of the cup is being closed off by the wall. Anytime she moves, she's going to drop some of what's in the cup.
Does a punnishment of one spank for each item dropped seem fair?
