Cooked meat, including both beef and deer, should not be at room temperature for more than two hours.  Add the amount of time the burger sat uneaten on your plate before it hit the fridge to the amount of time you carried it around for lunch and that's your answer.

On the bright side if you had become really sick you wouldn't be able to post this question.

The deer meat is irrealivant. Being that it's a burger, a combination of many things could be making you sick. Mayo is known for making people sick all on its own. The same thing goes with cheese. Though I haven't seen it, a burger patty can spoil over night. With the seasons now changing, it could even be coincidental that you caught a flu bug at the same time.

Anyways, get well soon. I'm sure you'll pull through.

I'm sorry you feel sick, [&o] but I admire your contribution to reducing the deer population. This species of large rat is taking over the planet, and I strongly suspect it's merely the advance guard of an invasion of Earth by an alien deer civilization. [&:] First they take our bushes [>:], then they give us Lyme disease [:'(] -- can ultimate takeover be far behind?[:o] Laugh if you want to [:D], but the truth is Out There.[8|]

There are several possible reasons why your burger has made you sick. The most likely culprit is improper food handling, as has already been stated. If your venison came from a hunt and not from farm raised venison, you have to keep in mind that it is meat in it's purest form. It is not full of antibiotics and preservatives, has not been radiated...or any of the other crap they do to commercially produced animal products. This makes proper handling of the meat...from kill to freezer to table to plate....even more important.

Other factors that can have an influence is the habitat where the deer was taken. Is it a deer that has been living on crops such as corn, beans and alfalfa? Or did it come from a deep woods area where it lived on bark and acorns? The environment from which the deer comes has a significant impact on the health of the deer and the quality of the meat.

Was the deer properly processed at kill? Were the internal organs immediately removed? Was the deer taken during warmer weather and not processed as qucikly as it should have been? Or was it taken during colder weather and allowed to hang and age in the proper temperature enviornment?

Also, I can tell you from someone who is an avid hunter and eats venison on a very regular basis...on the off years where only one deer is taken and it doesn't last through the next season...there is a time period when you begin eating the next year's kill that I limit myself on amount because the change can be upsetting to the stomach. Venison is an extremly low fat, high protein meat and sometimes too much, too soon can kind of shock the system.

edited to add:  Because you stated that it was burger, that also tells me that other meat was added to the venison. Venison alone is too low in fat content to make a proper burger and the little fat there is on venison is normally discarded as that is where most of the "gamey" taste comes from. Usually a pork sausage or beef fat is added. This could also add to the list of possibilities of bacteria developing due to improper handling.

you ate Bambi's mom, and now her spirit is taking it's revenge on you by making you sick?

deer meat always makes me ill, but it's a psychological thing. If you ate it last night and you were fine, its probably something else, not the meat...or it was out of the fridge for too long.

Erin, your posts are always so informative.   I wonder if someone could just be sensitive to wild meat.  I lived out west for years and had venison many times and it always upset my stomach.  I had an elk burger in Wyoming and that upset my stomach.  I finally swore off wild meat.  I don't know if that is the case with the OP because she didn't say she got sick when she first ate the burger.

michaelGA -> RE: Ok is it normal for Deer Burger to make you sick? (4/3/2006 9:30:07 PM)

deers are beautiful animals and i don't approve of hunting defenseless creatures...and i absolutely refuse to eat anything i do not know what it is. i will never go hunting.

BrutalAntipathy -> RE: Ok is it normal for Deer Burger to make you sick? (4/3/2006 9:33:49 PM)

Deer being beautiful, does that mean that it should be alright to hunt & eat ugly animals? heh heh

michaelGA -> RE: Ok is it normal for Deer Burger to make you sick? (4/3/2006 9:37:13 PM)

i'll stick to cows, pigs, chicken and fish.

Deer does have to be carefully "dressed".  It's very easy to nick the bladder or bowels while cutting it up and that can contaminate the meat.  I also cut away most of the fat right in camp before even beginning refrigeration as the fat has a tendency to go rancid.

However, since it was a "leftover" there's a good chance that it wasnt' the meat but the storage that was the problem.

Aileen68 -> RE: Ok is it normal for Deer Burger to make you sick? (4/3/2006 9:41:22 PM)

The last I checked...cows, pigs, chickens and fish were pretty defenseless too.
By me they have a program called Hunters for the Hungry.
Deer feed a lot of people who would normally go without meals because of these donations.
These people aren't very picky about the source of meat.

michaelGA -> RE: Ok is it normal for Deer Burger to make you sick? (4/3/2006 9:44:26 PM)

yes, i know they are, let me rephrase my original statement...i won't hunt, eat deer meat or anything else that cannot be rugularly found in a grocery store. i am very picky about what i eat.

stef -> RE: Ok is it normal for Deer Burger to make you sick? (4/3/2006 9:54:17 PM)

Venison is a common item in upscale groceries in the northeast.  So much for that reason.  I can't wait to hear the next one you cook up.

Not mocking you michael, for I truly understand where you are coming from as I used to view things from the same perspective. I was once an avid anti-hunter. I have to tell you though that that perspective is one of ignorance. It took me a long time to understand that.

Deer are wild and free creatures and sometimes we think of them as less viable sources of nutrition because of their beauty and the beauty of their environment. But then we justify eating cows and chickens and pigs who have lived in abhorrent conditions since the day they breathed their first breath and somehow we think that is ok. That is hipocrisy michael. An animal is just as dead if we put a bullet through it's heart, a bolt through it's brain or hang it upside down to let it bleed to death. If I had a choice in the way that I would like to go...I think I'd take the bullet in the heart option.

Yes, deer are beautful creatures and I place a very high value on them, as I do with all things in nature. It is for that very reason that I hunt. You see michael, we continue to build our strip malls and condos, we continue to fly down roads at 70-80 miles an hour. We continue to widen our horizons while steadily shrinking their environment and putting them in jeapordy of starvation or being victim to our morning commute.

I live in Michigan. Our deer population is great here. I have seen firsthand the deer who have herded up to survive the winter....starving to death. Let me tell you it is not a pretty sight. It is one that will rip your heart out. I have seen first hand....many times....the deer along the side of the road....legs broken....suffering. I have seen first hand the deer who have fallen prey to our beloved family dogs....and the damage they have done.

The reality is that the deer population will continue to grow unchecked unless we manage that through hunting. The reality is that the starvation and the suffering will multiply greatly...unless we manage the numbers of the herds. It is we humans who have put them in the predicament that we have...and it is up to us to maintain their numbers in a way that will assure them the best quality of life...and of death.

I am a hunter and I take pride in the fact that I am a very responsible and caring person who appreciates and places great value on what nature has to offer us. I take pride in the fact that I am also responsible enough to understand the issues and take the necessary steps to insure the best quality of life.
