I went to the doctor to establish my C.S.M.I.

I am currently 82% corn syrup. It makes me yummy and extraordinarily nice.

Earlier today, I had a hypoglycemic episode.  All I could find in the house to help was Karo corn syrup.  About 4 tablespoons straight from the bottle stopped the shakes and dizzyness.  Fine now, thank you.

I have that, too!  But all the dizziness and shakiness is the FUN part!  Why spoil it with corn syrup?

Back to "Food, Inc."  Local farmers' market is on a "roll" about Urban Homesteading - backyard chickens and goats IN the city.

Raw milk is "sold" there.  Actually, can't buy/sell raw milk.  You can only have it if it is from YOUR cow.....  Smart boys and girls sell "shares" in a particular cow and then on Saturdays, you can pick up your "share" of that week's production!

Lots and lots of odd seeds, some in started condition.

Goat milk cheeses.

Beautiful, beautiful (and damned expensive) beef.  Vendor says that the beef they use is 1/2 "White breed" <?> and 1/2 Kobe.  Gorgeous stuff and they make their own sausages.

And on and on......

Asparagus in season was so pretty, I hated to eat it..... Yeah, right!

Jeffff, frozen dinners are killers.  Those things, and the Naked and Odwalla fruit juices, are the main reasons that I got diabetes.

Why?  What is your aversion to carbs?  Aren't they supposed to be good for you?  The Amy's Organics are very low in calories.  It you're concerned with your weight, you should work out, dieting only takes you so far.  Aerobics is what generates weight loss, weight training tones your body so that it looks good, also, it helps your body burn fuel more efficiently.  But weight training by itself won't bring on weight loss. 

The cheese enchiladas only have 18 g of carbs 240 calories.  The vegetable korma, which I haven't tried yet has 41g carbs and 310 calories.  Paneer Tikka has 36g and 320 cal.  and Mattar Paneer, which is one of my favorites, has 54g and 320 cal.  I never had the Paneer Tikka before, either.  The enchiladas are great but I like to also put some hot sauce on them.

I saw Food Inc. when it first came out, and it totally changed the way I eat. It was a pivotal point for me.

I haven’t been able to LOOK at a cheeseburger in a restaurant since then.

I try to only eat organic now, and I try to eat only whole grain carbs.

On the plus side I've lost 4 sizes since last summer when I saw the film!

(I did start going to the gym too, but I'm convinced that getting HFCS and genetically altered foods out of my diet changed my life)

I havent read the thread yet but thank the Lord for Katy. When I read posts of your diet I felt nervous for you. Eating well is delicious and fun, I have faith in you Jeff, I am so glad you are going to eat better now.

Nah man Jeff, stay away from the frozen stuff, it isnt really that good for you, the containers it comes in, being frozen and all. They have already prepared meals that are not frozen at Whole Foods, for example. Dont be scared. Go buy a already made dinner or three, you will have them for the next three nights then go shopping again. If you eat out, try to go for the fresher restaurants. Try to get fresh food in your body, help your organs and brain function.

You will get used to it, you will like it. Frozen food will be a thing of the past or not as often.

Exactly. 1 gram of carbohydrate can raise blood sugar by 3 points -- normal blood sugar is in the mid-80s, so ingesting something with say 40 carbs (VERY easy to do), could raise a diabetic's blood sugar way out of the normal range, and that is where the damage is done.

Most people's body works well enough to prevent that from happening, but once you become diabetic...

I think people need to be aware of corn.  So much is made from it, because it is plentiful and cheap.  Unless it is heirloom seeds, chances are it is genetically modified.  Think about that the next time you pick up any variety of things made with high fructose corn syrup.  You are eating something that has been genetically modified.

Worse, the GMO strains of corn are having a negative impact on the other species of corn that have been traditionally grown in S. America.  There is a large variety of of corn species, however, the GMO species, that DNA has infected other species of corn and has drastically reduced the biodiversity of the Poaceae family.  I really don't know if it has had an impact at the family level or just at the genus level, but it has become a problem in S. America. 

I saw a paper on this a long time ago, but I can't remember the reference, but here's a link to an article referring this very problem
