Now this is a thread I like. I love mostly old world wines, Italy, some French, and SPANISH!!! (sorry about the drool) Rioja, anything by Torres, La Mancha has some good ones, SHERRY!!!! From Italy - Chianti in the summer, Amarone in the winter, and almost anything in between. French, I like mostly white wines, actually mostly their Chardonnays - Pouilly Fuissé, Loire, etc.... But also the Merlot heavy Bordeaux.... And Cognac, as to wine based.... mmmmmmmm..... Cheeses, love them all. Especially the really soft, smelly ones. Forgive my lack of vocabulary, my schooling was in German.... Anyone in NYC, go to Picholine, where a gentleman named Max McCalman is Maitre Fromagier, and it is a real experience... You have a question, he knows the answer.... That's my 2 cents worth. Yours, benji Edited to add: A real cheese platter does need to be appreciated in its own right, but if the wine pairing is done properly, each cheese and each wine can become better through each other.
