<smiles>--Made ya look, huh? This was inspired from all the comments about the cheese with the w-hine--I love wine and cheese--so take a break from the flame throwers, the rants, the fakers and wannabes and tell us about your wine and cheese---what kind do you like, do you eat cheese with it, what's your favorite crackers with those? Let's finally get the wine and cheese together.

Cheese HAS to be chedder! (Sharp or extra sharp) Townhouse or ritz crackers. Lets have a nice dry white, slightly fruity.

When it is wine on its own it is about the wine, when it is wine and cheese then its is ALL about the cheese. With a decent cheese your pallet would simply be too overpowered by the cheese to appreciate the subtle finesse of a fine wine, so in that regard any half decent dry white is appropriate just to freshen the mouth before the next bite.

Cheese of preffrence: A good strong extra mature chedder, others may take my fancy or not dependent on my mood, but a good chedder is always a delight.

Now this is a thread I like.

I love mostly old world wines, Italy, some French, and SPANISH!!! (sorry about the drool)

Rioja, anything by Torres, La Mancha has some good ones, SHERRY!!!!

From Italy - Chianti in the summer, Amarone in the winter, and almost anything in between.

French, I like mostly white wines, actually mostly their Chardonnays - Pouilly Fuissé, Loire, etc.... But also the Merlot heavy Bordeaux.... And Cognac, as to wine based.... mmmmmmmm.....

Cheeses, love them all. Especially the really soft, smelly ones. Forgive my lack of vocabulary, my schooling was in German....

Anyone in NYC, go to Picholine, where a gentleman named Max McCalman is Maitre Fromagier, and it is a real experience... You have a question, he knows the answer....

That's my 2 cents worth.

Edited to add: A real cheese platter does need to be appreciated in its own right, but if the wine pairing is done properly, each cheese and each wine can become better through each other.

I will second the cheddar vote to both of you, we love cheddar, when My teen and I were in the UK a few years ago we got VERY spoiled for the English cheddar---I couple that though with a hearty red wine--full bodied, just like the boy.

I love a good Pouilly Fuisse----last summer (being more a red wine person than white)---I set out to learn to appreciate the white wines---ohh and did I succeed! LOL

and IMHEO, there is nothing better than a roaring fire, a good wine, cheese and a naked sub for One to put Her feet on---

Now here is a subject very dear to my heart as I love good wines and cheeses. My favorite is a Louis Jadot Beaujolais Villages, preferably about 1998 or a 2001. I enjoy a nice Raclette cheese that is warmed by a fire till it is soft enough to spread over fresh french bread, Ah yes a little bit of heaven.

I've always enjoyed Stilton, and currently lean toward Shiraz and petite Sirah wines.

A friend of mine recently introduced me to some premium sake, great good fun trying those instead of the usual stuff.

Very strong hard cheerse, an onion and a garlic to chew on as well and a bottle of home made rough red wine (Sicilian of course)
