John, I prefer to work with either bridle or latigo as they are already dyed and well conditioned as part of the tannage process. If you are looking to do custom colors or finishes on your work you can go with veg tanned and then dye and top dress them as you wish. I've been using Zach While Leathers as my source for some time, and have always been very happy with the quality, though they are not the cheapest around. If you are just starting out and not looking to buy in quantities like shoulders, butts, backs, and sides I believe they also sell pre-cut straps in various types of leather by width, length and weight.
