I tried that recipe and I don't like it.

I'm trying to find something even fluffier than that.
At the moment, I'm experimenting with my own recipe, cause dammit, I gotta get this right soon.

We're both semi-addicted to doughnuts, but we're soon moving to the middle of nowhere with the closes shop that sells them over half an hour away.
Making them at home seems to be the only sensible thing to do, cause I really can't kick my addiction for this.

to everyone -- do you prefer gas stoves or electric ones? what's your reasoning?
i'm getting to know my gas stove and not sure what i think of it yet. =p

TotalDiscipline - setting tables and dishing up food is definitely enjoyable ^_^

Hi Lilly... Well he's not my Dom but regardless of that I do virtually all the cooking. He works very hard doing manly things so the least I can do is put a good meal on the table.

We don't have electric or gas. I cook on an antique wood burning agar that looks like a fine piece of machinery but is a temperamental pain in the ass! It lost its thermostat about 15 years ago!
For me its all about guessing the heat but over time I have managed to turn out a good souffle!
If I had the choice of gas or electric it would be gas every time. I cook a lot of middle eastern food that really can't be done well on an electric stove.

I've never seen anybody get a $2000+ induction unit for free with a kitchen...

I could surely believe that being that I know the potential costs of new kitchens. True though that I can't think of a time off hand where I've heard of it happening.

but why not..I've even given away 1000's of dollars worth of merchandise as a discount for a large contract. It does happen.

I'm with you. The Krispy Kream formula is the cheapest sort of cake donut you can make... all heavy and no panache. I prefer the light yeast raised donuts like Dunkin Donuts makes.

allthatjaz -- wow that "cooking device" sounds really interesting. ^_^ what era is it from?
care to share any middle eastern recipes? i adore middle eastern food, and maybe i'll do a better job of it with my gas stove.

allthatjaz -> RE: Ze cooking thread -- (2/11/2011 11:50:20 AM)

Persian food is spicy but not overly hot. Ghormeh Sabzii is a dish worth cooking http://www.farsinet.com/farsieats/recipes/ghormeh_sabzi.html and Dolmeh-yeh Seeb-Zamini is really nice http://www.persianrecipes.net/recipe.asp?ID=63 but the reason you need gas instead of electric is for cooking the rice. The middle east cook their rice very different to westerners. This recipe is for 6 to 8 people but can be cut down accordingly http://lacoolj007.tripod.com/id55.html You can cheat. Cook your rice till tender and then put butter all around a large none stick pan. Melt the butter and then put half the rice in and press it around the bottoms and side of the pan. Put the rest of the rice in and cover (I normally use a cloth as well as the lid to make an airtight seal) Leave on a very low heat for about 15-20 minutes or until the sides of the pan sizzle when you dab it with a wet finger. Tip the entire pan upside down onto a plate. The outside will of gone crispy. We eat roast potatoes, the middle east eat Tah-deeg rice. You can eat it with a drop of lemon and a little more butter. You will never of tasted rice like this its delicious.

Just checking the posts and saw this one......I'd give my left nut for a gas stove!  I hate cooking with electric ones....I grew up with gas, and am used to a burner being OFF when you turn it off.....electric ones are still hot and cooking whatever's in the pot...I've ruined a couple of good teflon pans and one stainless pot on electric stoves.  I have a ceramic cooktop stove now, and the problem I have with that is since there aren't any burners that are seen, my cats walk across it all the time.  They think it's an extension of the counter.  I'm so afraid that one day one of them will get up there and walk across it before I can get the pot of cold water back on the stove.

I guess it's because of the possibility of hurricanes here that causes most places to have electric stoves.....less chance of an explosion...at least, that's what I've been told.  So I just drool over the gas stoves in the stores....yes, they DO sell them here.....and go home to my electric.

Also, the temps in the oven are easier to control.

LillyBoPeep -> RE: Ze cooking thread -- (2/12/2011 6:09:43 AM)

that's something i really like about gas -- once i turn it off, it's off. i've had to adjust the way i perceive time while cooking, though, because i got in the habit of saying "well it has to cook for 15 minutes, so i'll turn the burner off at 12." can't do that with gas. it makes me feel more active with cooking, somehow, when cooking always sorta seemed "passive" to me with electric. the fire comes on right when i want it, and goes off right when i want it. i can adjust temperatures in an instant. it's pretty nice. ^_^ at first iw as afraid i'd burn my house down, but i really like it.

ceramic cooktops are intriguing because of their clean, modern look, but that's an interesting concern you've raised. i dont have any kitties so never thought about that.

Valentine recipes anybody?

I am going to make a batch of chocolate covered strawberries to give to my friends who are sans a Valentine today. How about you?

LillyBoPeep -> RE: Ze cooking thread -- (2/14/2011 6:00:45 PM)

how'd your strawberries come out? what a thoughtful idea ^_^

Kana -> RE: Ze cooking thread -- (2/15/2011 12:25:09 AM)

Cooking spareribs late-night

-Rub with garlic, salt, pepper, paprika, old bay, chili powder, cumin
-Take deep oven pan, add one cups water, 3 dashes liquid smoke, place ribs in raised tray in pan, wrap in foil
-Cook 2 hours at 350
-Remove from oven, cut small hole in corner, drain, let sit covered for one more hour
-Hit with BBQ sauce when uncovered after the hour
-Finish either on grill or in broiler, sauce to taste as you go

Bam!

Did I ever mention I am used to be a chef?

It was rainy and damp so I had to wait until today. They always turn out well and it is so simple to do.

I have a group of friends in my age range who are single now for various reasons so I send them each a card and make them a treat for VDay, everybody needs to feel loved.
