They go talk to other people who have direct knowledge of what the President says and does when there isn't a camera in his face. The President also has people around him who can be called official spokesholes. The reporters then go to them for confirmation of what has been told to them, and give the spokesholes the opportunity to deny it ever happened, or to try and make it sound not so bad.
