I do a lot of egg white omlets with fresh tomatoes, a plethora of peppers, mushrooms and onions... Sometimes I add meat sometimes not. Sometimes I get fancy and do a lil feta, tomatoes, and fresh spinach. I do a lot of different things with spinach a bag here costs about $1.99 and I can get several meals out of it.

I also do lots of "scrambles" with egg-beaters in the wok (I just don't like egg whites.  I keep trying.) I found the trick was to add equal parts veggies and egg

Oh hell yeah, Aynne, I have sesame oil (toasted, no less) and peanut oil. I use it for my seared ahi (didn't put ahi in my earlier posts because it is not cheap).  I marinade the ahi in both oils, soy sauce and wasabe powder, add sesame seeds, let sit for a bit.  Pan sear it on med high to high for just a short bit (depends on thickness of the ahi) - still want it raw inside, but warm, and the outside seared.  Serve over mixed greens with red onion, grape tomatoes, sliced banana (no I'm not kidding), cilantro, and peanuts if you like 'em.  Drizzle with Newman's Own Sesame Ginger Dressing, and plan for your trip to Heaven LOL!

I also use it for veggie stir fries.  That stuff is divine!  But NOT cheap.

ETA: Everyone said I couldn't use my wok on my electric stove, but I do, and it works out just fine.  Doesn't get as hot (and therefore cook as quickly) as when I had a gas stove, but I still use it.

Like you, I have tried egg whites and just can't stand 'em.  But I did try.  I haven't tried egg beaters, though...I should know this but what exactly is it?  Is it a blend of mostly whites with some yolk added in?  I'm afraid. I'm very, very afraid.

I dont eat eggs but i used to make a tofu scramble, just mashed firm tofu cooked with various spices and seasonings. Dont know if that would be an idea for you or not.

They seem to be I use them a lot for homemade salsa. They give off a nice juice and balance out the garlic and jalapeno peppers.

They seem to be I use them a lot for homemade salsa. They give off a nice juice and balance out the garlic and jalapeno peppers.

Romas can be frozen easily too, my ex grew them in the garden and then he just tossed them in the freezer, leaving them whole and skins on. Then throw some in when he made tomato sauce or chili or whatever..

I'm willing to try it, but anything soy-based ends up giving me bad reactions, if I have too much of it, so I'd have to be careful.  I switched from soy milk to almond milk for that very reason (tofu is soy-based, right?).  Plus I think I just like eggs too much!

Yes, tofu is soy. I am not a great fan of the hard tofus but i did like the scramble. Yes, if you cant handle soy well then it sounds like its eggs for you!

I'm really, really, really embarrassed to admit this....but I had no idea.   I had to google it myself....and I am COMPLETELY embarrassed by the answer:

Egg beaters ARE egg whites, with nutrients and vitamins added. they are yolk-free (cholesterol free)   Don't ask me why, but I still don't like egg whites but love the taste of egg-beaters.  I swear it must be in my head.

OK this just cracked me up!  Are they colored yellow?  Maybe it's the visual - makes it seem more like actual egg.  A psycho-sematic thing (or just a psycho thing).

Using what space you have to garden is a good idea, and if you have a little more space, get chickens. They are surprisingly easy to care for, and fresh eggs are amazing. Not practical for most people, I know, but a lot of cities allow you to have up to three chickens in your yard. They are pretty cheap to keep, also.

How to eat well for cheap?

First, realize you can't do this w/o some cooking experience. You don't need to be a cordon bleu, but if boiling an egg is difficult for you, you are going to have issues.

Invest in a small chest freezer, it will pay for itself in six months.

Processed food, ready made meals, and most snacks are not good for you and are very expensive given their limited nutritional value. Stop buying them.

Most Americans eat far more protein than they need. High quality protein is expensive, so cut down drastically. Chicken is cheap, especially if you learn to cut your own. Look for interesting ways to cook the cheaper cuts of beef and the lower priced fish.

Shop sales, use generics (whenever possible), buy in season when it's cheap and freeze for the rest of the year (I do this with the items that get very pricey in the off season, such as berries, peppers, etc.).

A huge part of my weekly shopping bill would be non food items, except I buy them in bulk at Sam's club and save a bundle.

Farmer's markets are a god send for those of us that like organic produce but don't want to pay high prices. It's worth the gas to find a good one.

Buy your spices in bulk at the health food store, then put them in your own bottles. You will save a lot doing this.

Literally go through your cupboards and look at anything in there that is not a staple item. Can you make it yourself? Brew your own tea, make your own risotto and mac and cheese, salsa, condiments (as much as possible) and salad dressings.

Can you can your own tomatoes? Make your own pickles? Bake your own beans?

Yes, some of this is very time consuming. I use the crock pot to make my own soups, stews, beans, etc, while I am busy elsewhere.

Much of what I am suggesting will require you to cook more and to know more about the things you eat. This is good for you, it allows you to make healthy choices.

So far, the net has never failed me in finding recipes for the things I want to do, like make my own Italian sausage, for instance.

You may very well find cheap eating is healthy eating.

And don't forget coupons....and grocery store cards. In my area we have Krogers, you can go online and add the coupons right to your store card rather than having to clip them.

Amish stores, if you can find them, are also a great way to buy whole foods cheaply.

woah! that online coupon system is awesome. ^_^
i like to scope for coupons online, but when you run out of printer ink, that can put the kibosh on it until you get new ink. =p
you can really save a lot with coupons, though.

Ok, so Walmart haters dont read this post!

I just found an interesting article (or pre-article since the study will be in Sept 2011 Consumer Reports mag) on which online store gives the best online grocery savings. Online Walmart won (cheaper than buying at Walmart stores)..
