Tomorrow, the first of October is World Vegetarian Day.

This is an annual occurrence of course.

For all of those that are planning to celebrate it, I would just like to remind you to put your vegetarian in the marinade tonight.

So I take it that those who have answered will not be participating in World Week of Prayer for Animals that starts tomorrow, either.

Unless it is something like, "Please let this steak cook up extra tasty. Amen."

"Big RARE steak tomorrow night."

What are steaks hard to come by in those parts ? Only joking, but actually one of these days we need to have a rare steak contest. We'll get a bunch of the boys together who actually like meat rather than shoe leather (to eat at least) and about six bags of charcoal.

I know how to light it right, believe me, propane does not get this hot. I pile it up in the grill until it is less than ¼" from the ,,,,,, thing you put the meat on. The top part. They say a hot grill is one you can't hold your hand over for more than a few seconds ? Not here, you can't even get near it.

As much as I like filet mignon, there is not enough fat on it so it must be cut at least 2½" thin. Even at this heat it's hard to crisp the outside keeping the inside cold. I can't stand it when the meat gets over room temperature in the middle. Tbones are OK, if the fat catches fire quickly enough but usually I only cook one side now.

In fact inside that's about all I can do because I no longer have an infrared broiler. It was a nice stove but it was built in 1994 and the damn wiring started going in it.

So how rare is rare ? I heard of some sports guy who ate his steaks raw. I could live with that but I like the crispy part, and some of the fat melted off, makes it more juicy. But a cookout is a PITA around here because the normal homeo sapiens have this notion that meat should be brown on the inside. So when I am about done eating the coals have burnt off enough to cook their steaks. Well if there aren't too many guests I just pile all the coals on one side of the grill. That works pretty well, as long as the meat is thick enough. If it's too thin you might as well just pan fry it.

2" to 2.5" thick steak there term. Let it get up to room temp first. Cracked pepper and sea salt rub. charcoal fire (preferrably lump charcoal) hotter'n blue blazes and then 90 to 120 seconds/side.

Pull it off let it rest for a few mins and YUMMMMMMMMMMMMMMMMM

I don't use the pepper, but yes on the salt. Mine is touched only by fire and salt. I don't use any sauce or anything else on it, which is probably why I am so picky about meat.

However the blood all over the plate makes a nice sauce for the veggie, potato or whatever else is on there.

But I do have a vegetarian side, for one I lke brocolli and I eat the skins of the baked potato. Now that has pepper on it, and the butter and sourcream mix so well with the blood MMMMMMM.

And you may have heard about my killer salad dressing. Vinegar, seasalt and sourcream. Although sometimes I crush up some garlic and whatever. If I'm lazy I just use Italian, but when I first get it I don't shake it, I pour the oil off. Damn oil ain't got any flavor to it.

People say I over spice shit, but I think spices are an essential food group. Just not for steak. Now on chicken or pork I have more herbs and spices than Colonel Sanders. And chicken is best fried in bacon grease.

But like I said I have my vegetarian side and at times have deep fried the brocolli. And actually breading and deep frying is the only way to eat cauliflower.

And while this may disturb the vegetarians here, a salad is not a salad without pepperoni !

This just serves as another reminder that I am glad we are at the top of the food chain.

Making a 3.5 lb. beef roast today.....slow cooked in the oven for 3-4 hours.....DROOOOOOL.....
