I just ate my dinner - 12:30 AM local time. Made my always-changing veggies-and-pork stew / or it is soup? Who cares? It was delicious. So that's my Oct. 2nd wish for you - wonderful meals - home cooked - you get to decide the menu. P.S. Canned tomatillas, tomatoes (fresh and canned), three kinds of sweet bell peppers - one of which tastes like candy, two kinds of onions, sorreno hot peppers, chipolte hot peppers, cumin, garlic powder, and only a touch of salt. But the VERY best part? The pork. Nice, small roast. I had butcher cut into cubes. Then, instead of my usual frying, I spread them out on a baking sheet and broiled 'em. Carmalized one side, flipped and carmelized the other side. Drained fat bewteen the two broilings. I tasted the pork before adding to the crock pot. "Yikes," I thought, "Way too dry." Nope, not after the juices were absorbed. Tender, juicy, flavorful. Flavors melded perfectly, and yet stayed distinct. Fresh flour tortilla - hey! this IS the Southwest, y'know! Man, life is good! And that is my wish for you, m'dear. Wonderful food.
