Interesting topic and one I have given some thought to. I would define a sexual fetish as something a person desires to enhance his/her arousal. Something a person NEEDS in order to achieve arousal and/or orgasm is considered a paraphilia (in my mind, not the topic of this discussion).
I would say universally males tend to acquire more fetishes than do females. As a general rule, they spend more time thinking about sex, and also tend to have more compartmentalized brains. For whatever reason, it's been my experience there are far more men fixated or obsessed by certain sexual turn-on then females.
Males tend to lean towards feminine objects, such as lingerie, hosiery, high-heeled footwear (stilettos and boots), along with latex, chains, leather, etc. Some go for certain body parts, feet, breasts, asses, armpits, others for particular deeds, almost always centering around some form of humiliation: cuckholding, forced fem, etc.
Although wearing lingerie or dressing as a female enter into many men's sexual orientation, I don't exactly consider cross-dressing a fetish. It may be for some, for others, it's so much more (and again not the topic of this discussion).
Female sexual fetishisms tend to revolve around masculine things, the feel of a beard, the smell of leather (or latex), along with corsets, pain, bondage of all types, and all kinds of medical-related fetishes. One of my personal favs is "talk dirty to me."
I think female fetishes have come out of the closet so to speak more recently and so there has been much less study about them. And I agree, males are more obsessed on certain things, or certain acts, females more on aquiring a specific mindset (and thus their draw to BDSM).
