i know that potato's are not the greatest for diabetics, but I am working with what we have and at least it's home cooked.

Baby steps, yo. And I sat at the table for all the chopping, so I am simply hot ish, but not in pain. And man did my eyes buuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuuurn chopping those damned onions, but Daddy will appreciate the dinner, and it's only a temporary annoyance.


This is not intended to be a point out everything wrong with TFB's dinner she did wrong with the meal thread please, it's celebrating the fact I cooked something for my daddy and I even though I hate cooking.

In future, use sweet potatoes over white. They are much higher in fiber which slows down the food turning to sugar and releases it gradually into the blood system.

Always use alternatives with higher fiber. Sweet potato instead of white. Brown rice instead of white. Whole wheat flour instead of white.

Provided we have any on hand. I cook randomly and I cook what's quick and available. I much rather have a tv dinner than cook, so we don't have a lot of food stuff around plus we haven't been able to afford to go grocery shopping yet, so I am using what's on hand from my family stock piling potato's lol.


so we'll ease into this whole cooking thing lol. I think Daddy would also turn up his nose at sweet potato's in this meal than white. but I could always cook my potato's separate.

So when you do go shopping make a list and get the things you ought to be eating rather than things you know you shouldn't be. After a while, baby steps just cease to make a difference and you have to exert yourself and make strides to see positive changes TFTB. Diabetes is far more serious than I think you are realizing and you are so young, please take care of yourself.

Also, i hear lol that chopping onions emerced in water stops the eyewater thing. 

I am very bad as i haven't really taken diabetes as seriously as i need too.  I keep kicking myself because it's not a disease you "feel" if that makes sense.  I mean i don't feel pain, i don't have surface issues like a rash or whatnot, so yeah, it's easy to just push it off as a oh, it will be okay.

I am taking this month to really focus on getting this right starting with drinking water -- which i rarely do --- eating a hell of a lot better and working out.

TFTB, it's good you are trying to work with what you have, but what i would advise is everytime you make a meal, you look up the foods you eat and find out where on the glycemic index they fall.  And YOU should measure everything for now so you can figure out how much you are actually eating of foods you shouldn't be eating a whole lot of.    This way you can start obtaining information of the foods and adjust your plate accordingly even if its not exactly what the others are eating, i.e., tonight you have less potatos and less carrots and more beans and meat.  Onions i think are a little high in sugar so you may just want to cook with them but let others eat them.   Yes, having your meat ball and more green beans and less potatos and carrots isn't exactly gourmet or even fun, but you will still get food.


What i would do before you go shopping is plan your menus for each meal you are buying food for, then you at least have a menu to figure out the food you need and how much.


Also, maybe one day you and your man can prep the food for the whole week, say on one of his days off -- it will probably take about an hour for both of you to do, meaning you chop veggies and put them in baggies for the servings you will use for each meal, you get any meat marinated and then i BELIEVE -- someone confirm this please -- you can throw the serving of the meat into the freezer. 

Then you have everything ready for you to go in and throw it all together the meal you want it.  Or you can make your own TV dinners, i.e., for each meal  say for tonight, you are having veggies, potatoes and meat balls. 

You can prepare a whole bunch of meatballs during your and the man's hour or so of prep time so all you would have to do is divide them into serving sized and put those in separate baggies.   your veggies are easy as they are frozen as well as the potatoes.

So to make a TV dinner, you cook up a serving of meatballs, put these in one baggie, put a serving of veggies in the other.   So tonight all you would have had to do is throw those in a microwave to heat up and cook the potatoes. 

make sense?  Seriously, if you have time doing a lot in one time, you should do more when you can -- prepare the food for cooking so all you have to do is grab the prepared food and either heat it up or cook it without prep.

Like tonight you are making meatballs, make 2 extra servings of same and cook them and toss them in the freezer or fridge if you will be having them in a day or so.   That way you have another meal already started.

But how would you chop under water? I also heard if the onion has been in the fridge for a few days, they're less eye burning.


Yup I know what you mean, though I have felt the symptoms like dry mouth and having to pee really bad and not producing much for a while, but other than that I felt plenty fine, didn't have any of the other symptoms of diabetics and it was a real shock the day the dr said you've gone from mildly diabetic to more diabetic than not. Cause more often than not some of us feel fine, or have felt "off" for so long we're not recognizing when we feel " more off than usual"


I wanted to do Once a week cooking, and I asked him to help, but he said hell no, he's not doing all the food prep for an entire week, and he says what will happen is instead of helping me he'll end up doing it all while I sit back , and that's not true I get frustrated or tired or I don't know how to do something and he tells me to get out of the kitchen, i will do it myself.

I was thinking if I liked the chicken and carrot and water chestnut tv dinner why couldn't we come up with that on our own, cause it's so easy.


And with a crock pot, you can do a lot of savory things, I just have to compile a menue plan.

Yes, it makes sense, tonight the meat balls are premade you just microwave them cause it's all we got, but I will be grocery shopping on monday most likely and can pick up some ground hamburger and other stuff I can portion out and have ready to go.

You got a freezer? Put the onions in there, as it's the fumes from the oil that are released by cutting what makes your eyes go all watery and teary, 5 minutes in the freezer and it's too cold for them to release the substance that causes the crying, simple trick!

Fantastic that you are chopping onions, most of the ready made sauces or sauces in packets use onions, plus salts, sugars and tons of sodium, so you're getting taste for a lot less money and a much healthier option.

If you're shopping, just check what is on offer, dunno if you like squash (butternut squash and all that) but that tends to be fairly reasonably priced and you can just stick it in the oven with the potatoes, drizzle with a little bit of olive oil, herbs and spices and you got a great side dish or main course. Additionally you can have the left overs the next day, just put them in the micro wave and warm up or make soup out of it.

As for hating cooking, nope, you just need a few successes and then you'll realize how much fun it is to cook, and how much cheaper and tastier it is, think what you can buy with the money you don't spend on ready made meals and how much you are doing for your health!

Aynne is right. It is not easy to be healthy these days even if we know what that means. Everything is bad but some tings are worse.

A bunch of veggies and some meat balls is not really unhealthy. Chopping up onions is time well spent. Now I give you ancient Chinese secret : breathe through your mouth. Use nose plugs if you must but if you breathe only through your mouth the onions will not bother you.

But be diligent, get away from anything made. In fact think of this, you can make most of it better except for a few spices, and those can be discovered. With ten spices on your rack you can duplicate damnear anything. Like KFC ? I can come close but I found that too many times mine was better. It wasn't really but it was just as good but different.

Like I made KCS tonight, which means Killer Chicken Sandwiches. Tonight was a bit different than the usual, I used [poultry seasoning which has] onion, garlic, basil, rosemary, coriander, sage, thyme, paprika, black pepper and marjoram.

I have oregano so I don't need marjoram but this was easier. I also added [lemon pepper seasoning which has] salt, black pepper, citric acid, msg, dextrose, turmeric, garlic, red pepper, onon, "spice", sand and atificial and natural flavor. Also [vegetable flakes which has] dried carrots, celery, tomatoes, onions, spinach, parsely, potatoes (!) and bell peppers.

It came out alright but could've been better. First of all lemon pepper spice is supposed to have lemon zest in it. I ran out some time ago but I am not a lemon pepper freak so it was no big deal. FYI zest is the skin, NOT THE WHOLE PEEL of an orange or lemon. The colored part only is scraped off with a zester and you let it dry out. It's good on chicken. Lemon and orange are out there, but you could have grapefruit zest or who knows what else.

But when I don't mix spices, for KCS I would usually use the usual garlic and onion powders, white and cayenne pepper, celery seed, thyme and sometimes sage. Sage is more for pork. But remember it varies. Who is eating as well as what kind of mood I am in. (I'm sure I forgot something but....)

But back to the meatballs, there are a million different recipes for them.

Certain things you cook are a sort of expression I think. Your meatballs for one, a few other things like for a big example your spaghetti sauce. Unless you are totally lazy and just pour the jar in, no two people make it the same. It's amazing that only 99% of the peole who make sauce think they make the very best sauce in the world. Most of them have witnesses, like twenty people who say theirs is the best. They forgot to mention that 6,000 people have tried it. And really, nobody ever says it sucks unless it's REALLY bad.

But we have all this shit going to come out on the other thread. I am different, I am the greasemeister, so my shit really IS better.

You just have to use it in moderation lest you catch a heart attack. They say I could live to be 100, I am trying to get that down to more like 70 so grease is very useful.

I put a matchstick in my mouth (striking end sticking out) before chopping onions.  The sulfur absorbs the fumes.

Yes, I like squashes, my dad grows yellow ones, the bumpy ones that look like they have warts on them, and smooth squashes and zoochini in his garden. Butternut is sometimes cheap, it's sold by the pound and if you find a nice not so heavy one, it's only like 3-4 bucks.

Make sure when chopping onions that you leave the root intact as much as possible (until you get to the base of the onion) at first and that your knife is very SHARP (dull knives are more dangerous in the kitchen than sharp ones). That will help to limit the gases/juices released as you are chopping.

I don't know about your grocery store, but in mine the freezer section already has chopped onion in the bags of frozen veggies (they also have one that is mixed peppers and onions). That's always easy for a quick omelet or stir fry.

Tonight we had stuffed zucchini boats. I sliced the zucchini lengthwise and scooped out the seeds. I chopped them up with some chopped bell pepper and chopped mushrooms and sauteed them in olive oil with a bit of sausage (out of the casing). I put it back in the hollowed out zucchini, topped with a bit of shredded parmesan and baked it in the oven at 350 for 30 minutes. Easy peasy.

Thank you Fornica, I also want to get Daddy to pack a lunch for work, cause he works from 11 am to 7:30 to sometimes 9 pm, and his idea of lunch is snacking on some bread sticks while on his half hour break. I was packing him a lunch and he was eating it got got away from that, and he's so picky and finds tons of excuses why it's not reasonable or doable to pack a lunch, like there's no fridge, or there's no microwave, or he'd have to keep it in the car, and then he'd have to go to the car to have lunch, yada yada yada.

Often, making a start is the most difficult thing. You have done that, which is great!
It takes about a month for a new habit to get rooted into your behaviour, or old habits to get erased. Try to keep going for a month.

Then you should do what I do: buy a lunch bag and a cool pack. Make him a sandwich using healthy bread i.e. multiple grain bread and add a piece of fruit. No excuses then and at least he'll be eating something (relatively) healthy.
