Oxtails (or smoked pork neck bones), 1 bag frozen mixed vegetables, 1 packet Goya seasoning with coriander (or 1 cube beef bullion and fresh minced cilantro), 1 chopped yellow or white onion, 3 parsnips peeled and cubed, 2 cups water or beef broth, 1 can stewed tomatoes (esp. Muir Glen). Cook 8 hours on low. This may be "general knowledge," but I discovered on my own that if I substituted parsnips for potatoes in stew-type dishes, I got a much sweeter and more exotic taste. If you love potatoes, maybe 50/50 potatoes and parsnips.
