For all of you bakers out there, here's today's baking tip..... when using raisins in oatmeal rasin walnut cookies, BOIL them first. Yes, I said boil.....they plump up very nicely and stay soft when they are baked. You don't have to do the rolling boil thing, just heat the water to where it starts to boil and let them soak. Just remember that they are hot, and will melt the batter a bit, so let it firm back up. Takes about 5 minutes. mmmmm.....oatmeal raisin walnut cookies.....and I'm outta raisins. dammit!
