Alright CM folks--you've given me excellent recipes in the past.... every recipe I've pulled off CM has been a success at the FEMDom parties.

NOW...I need an entree that is really easy to make AND 100% Gluten free...

any help here?

Just gluten-free? Now if it needed to be gluten-free and vegan, THAT might pose a challenge.

Just make rice or potatoes your starch.

Sorry if you already know this:

Gluten is a protein found in wheat (including kamut and spelt), barley, rye, malts and triticale. It is used as a food additive in the form of a flavoring, stabilizing or thickening agent, often as "dextrin".

Additionally, a gluten-free diet may exclude oats. Medical practitioners are divided on whether oats are an allergen to celiac disease sufferers[3] or if they are cross-contaminated in milling facilities by other allergens.[4]

Gluten-free food

Several grains and starch sources are considered acceptable for a gluten-free diet. The most frequently used are corn, potatoes, rice, and tapioca (derived from cassava). Other grains and starch sources generally considered suitable for gluten-free diets include amaranth, arrowroot, millet, montina, lupin, quinoa, sorghum (jowar), taro, teff, chia seed, and yam. Various types of bean, soybean, and nut flours are sometimes used in gluten-free products to add protein and dietary fiber.

Almond flour is a low-carbohydrate alternative to flour, with a low glycemic index. In spite of its name, buckwheat is not related to wheat; pure buckwheat is considered acceptable for a gluten-free diet, although many commercial buckwheat products are actually mixtures of wheat and buckwheat flours, and thus not acceptable. Gram flour, derived from chickpeas, is also gluten-free (this is not the same as Graham flour made from wheat).

Gluten is also used in foods in some unexpected ways, for example as a stabilizing agent or thickener in products like ice-cream and ketchup.[9][10]

part of the challenge is that a lot of the seasonings packets and dressings that I use....are not gluten free. I'm thinking I'll do a crock pot recipe but I have to be 100% sure that ALL of the components are gluten free. I'm kind of amazed where it pops up

"Easy" is subjective. I often try new recipes from allrecipes.com and read the reviews to get a consensus about the recipe.

This one looks easy to me:

Use the calculator to adjust for # of people.

Serve with rice. I'd add green peas as well, for color, and because they are easy.

This is a fabulous crockpot cookbook: The Gourmet Slow Cooker: Simple and Sophisticated Meals from Around the World

No seasoning packets allowed :)

Take a look at the table of contents/index and if a recipe isn't available online I will scan it from my copy.

Off the top of my head I'd suggest Chicken Piperade or Chicken Cacciatore, served over rice.

Both recipes suggest you flour and fry the chicken ahead of time but you can completely skip this step, skip the flour, or use a gluten-free flour.

This is really easy and yummy and can be adapted for the crockpot, in which case you can completely skip the flouring and frying, skip the flour, or use a gluten-free flour.

For the crockpot, I added the tomatoes at the beginning and the cream during the last half hour. I used Riesling and reduced the amount as you don't need as much liquid for crockpots.

Sauteeing in a gluten-free flour will help the sauce to thicken.

Champagne Chicken

* 2 Whole boneless, skinless chicken breasts
* 1 Cup flour
* White pepper to taste
* 4 Tablespoons olive oil
* 1 Tablespoon butter
* 1 1/2 Cups champagne or white wine
* 1 Cup heavy cream
* 1/2 Cup CALIFORNIA SUN DRY Tomatoes, Julienne Cut, in oil, drained, or Smoked Julienne Cut, cello pack

Split both breasts to make 4. Combine flour and white pepper. Roll chicken breasts in mixture until coated. Heat 4T oil and 1T butter in skillet over medium high heat. Add chicken & brown on one side. Turn chicken, brown 2 minutes, add champagne, raise heat, bring quickly to boil and spoon liquid over chicken, then reduce heat to simmer. Poach only 4 minutes more and remove chicken to platter, cover and keep warm. Raise heat and cook liquid until wine is reduced by 1/2. Add heavy cream to skillet and cook until mixture thickens. Add Tomatoes, either from jar or cello pack, stir well, pour over chicken and serve. Serves 4.

[Serve over rice]

Or perhaps you'd like to be a bit more specific? Dessert, meats, vegetable dishes?

One of the things you can do is skip the spice packets. Simply mixing the spices together only takes a few moments and will usually taste better (once you get the hang of it.)

I'd start by buying a cheap coffee grinder and convert it into a spice grinder. Here's how to do that: Don't use it for coffee.

About 90%of the spice packets are just filler anyhow. It's to make people feel that they are getting something for their $1.95. So they fill it with wheat or some other cheap grain. Then they have to put silicon dioxide in it to keep it from clumping, making it even healthier. Silicon dioxide, by the way, is sand.

Nope. I have that heartsmart fako crap in a tub.
Don't have any heavy cream.
Don't have any wine or champagne (no alcohol)
No flour (don't bake)
Have no idea what "white pepper" even is.

I do have extra virgin olive oil.

Although grinding spices is fun, if you have ground cumin, no need to go out and buy cumin seed, for example.

I am liberal with spice substitutions. I'd use black pepper for white pepper, and if anything calls for any combo of basil, oregano, thyme, etc, I just use Italian seasoning, and do the same for spices that go into Pumpkin Pie seasoning, although I do have cinnamon stick and powdered nutmeg for some recipes that do demand individual spices.

When I'm not inclined to food shop I go to allrecipes.com and plug in a few ingredients and see what I get for recipes. I got a yummy pork, apple, and winter squash recipe this way.

Also try finding "Rachel Ray's Express Lane Meals" recipes - these are geared towards only having to buy a few ingredients (although she has made assumptions on what you already have on hand.)

take a look thru this site- Living Without magazine I have seen at stores/barnes & noble but they also have a website with some recipes- divided into gluten-free or dairy-free or for allergies.. I have never tried any of the recipes myself yet since I dont have a problem requiring it.. If this is an ongoing need then maybe buying the magazine or their e-books might be a good idea..

Chicken Cacciatore for the crockpot:

1 whole chicken (4#)
1 28 oz can tomatoes
1/2 cup red wine (optional)
2 t dried Italian seasoning (basil/oregano, etc.)
1/2 C diced onions
1/2 C diced celery
3 cloves garlic, diced
salt and pepper to taste (try 1t and 1/2 t)

not in original recipe but added for nutrition:
- 1/2 C dried lentils

Cook for 5 hours on low, then remove the chicken. While it cools enough to de-bone, add
- 1 T tomato paste
- 1 can white beans (also not authentic but nutritious; optional)

Discard the bones, skin and cartilage and put the meat back in the pot.

----

- feel free to skip the lentils and beans and serve over rice
- it will be easier but more expensive to use boneless/skinless chicken instead of whole chicken

oh. well. let me rephrase that.

my fridge has....condiments in it. pickles. jam. salad dressing. And my housemate's ketchup and mustard.

oh. and batteries. they store fresher in the fridge.
