Some of the beans won't grind completely, but they don't need to.. really, they need to look something like cracked peppercorn when you are done grinding.. not a powder or anything. They should be very course.. that should help with the bitter after-taste. You still might not like it, but you could give it a shot and see if that makes a difference to your palette.
