Get one of the web enabled cams and leave the it on, set it up with an externally available web page that has all the security options set (username &password that are NOT factory defaults, non standard port, no guest access, etc). That way you can browse to the site at any time, log in, and see what is going on, most have a built in mic so you can hear as well. The good ones you can even pan/tilt/zoom the camera. Of course all she needs to do is unplug it or cover it (same with a security cam) and you can't see shit. And you would probably need to check the cam itself to see if there is any way to have it auto run on reboot in case the pc crashes, there's a power outage, or she just reboots the pc. Seeing the webcam on means far less when it is always on.
