For anyone interested this was quite simply the best turkey I've ever had. Real flacvor and quite juicy. The carcass was picked clean by me and my friends. Doubt I'll get enough meat off it for 1 sandwich.

Thanksgiving was really different this year, and it was a bit of a challenge to go into it with a fun attitude. It's always been my favorite holiday and this year, due to a whole bunch of family stuff (many people with individual, serious issues they're dealing with), we didn't get together. So my mom & I went out to dinner- which was a first.

Usually we all crowd over at my brother's house and it's the typical Thanksgiving Dinner - he keeps up my dad's recipes and serves on the family platter that's been our annual tradition.

So we all called each other this year, and then Mom & I went to a fancy restaurant where they (in my opinion) over-fancied the dinner. It was good, but not great. What WAS great was the awesome conversations she & I had, and the time we spent together, and how grateful I am for my family, none of whom harbored any ill feelings about everyone doing their own thing.

So while at first it was hard to wrap my head around the concept of going out to dinner and not being with my whole family (even the Mister was away, due to work), I went into it with an open attitude (we decided to call it our Thanksgiving Adventure) and enjoy a new experience.

Home cooking still a WHOLE lot better, and I am planning on cooking a small version of Thanksgiving Dinner on Sunday for the Mister and I.

We decided to go pretty non-traditional while still utilizing the traditional elements.

We started with the turkey. Since we didn't have one we went for chicken. Slow cooked a couple of chicken breasts in gravy.
Then there was mashed potatoes and stuffing. Instead we had potato pancakes with stuffing and shredded gouda mixed in.
Instead of the typical sweet potato/yam dish we went with sweet potato soup.
Rather than cranberry sauce, we had ice cream with a cranberry sauce glaze that I worked out.

At least, that was the plan, but due to extenuating circumstances I spent turkey day home alone with a single serving turkey dinner from the grocery. I wasn't going to go through all that effort just for myself.

This was the first year in...ever....that Mr had to work TG Day. I honestly didn't plan to do a big special meal.
Oh, and I NEVER do the bird, that's always Mr's job....I much prefer to do stuffed cornish hens or ham
As it turns out. my older son who is now living with friends called and cried to me "Momma, pleeeeeeeease make a TG meal, I'm so hungry for your cooking"
I'm a sucker for a pretty please...so Weds night, he and I went to the local grocery and got a few things to make. I honestly didn't think I had gotten as much as it turned out to be:

Roast turkey
stuffed with giblet/apple/mushroom sage stuffing
green bean casserole (recipe adjusted a little so it turns out awesome instead of green beans with mushroom soup LOL)
Mashes potatoes and gravy
The little one wanted sweet corn on the cob
and mandarin orange jello with whipped cream.

Mr usually does pumpkin pies, but since He worked yesterday, He and the little one will be making pies this weekend.

Oh, and I have to say thanks to all of you...I swear to Goddess I've gained 10 lbs just reading the damn thread through!

I cooked a standing rib roast, with steamed green beans, twice baked potatoes, deviled eggs, and a nice napa cabbage salad... only thing left was some of the roast.
