Seriously, I never even knew what cumin tasted like being the Mid-Western Polish / German that I am.
Now, I add it to just about everything savory and (a pinch) to most sweets.

I'll go with Carrot Cake with just enough cumin that folks ask "What is that spice?"

Every chef has their own "Herbs de Provence," so let's see what response that gets.

Steamed Mussels with Fennel, Tomatoes, Ouzo, and Cream

1 tablespoon olive oil
2 shallots, finely chopped
4 cloves garlic, finely chopped
1 bulb fennel - trimmed, cored and thinly sliced
1 large tomato, cubed
1/2 cup white wine
1/4 cup ouzo
1/2 cup heavy cream
4 pounds mussels, cleaned and debearded
1/3 cup fresh basil leaves, torn
salt to taste

Fennel the bulb, not the seed.

Trim the bulb of small fronds, leaving it potato shaped / sized.
Cut in half long way, that is from top to bottom. Peel a layer or two, as you would an onion.
Brush cut surfaces lightly with olive oil.
Salt and pepper cut surfaces. (Best pepper to use here is freshly ground peppercorn blend. I have just pink peppercorns in a grinder, but too subtle to stand against the fennel.)
Wrap in foil. Grill with cut surfaces down. Done when top is tender to a sharp knife or fork.
Since it's basically steamed, remove from foil and put some grilll marks on it.

Since this has a strong, distinctive flavor, grill next to steaks or marinated chicken.



Next up: Shrimp, but I'm thinking I'd like something Italian tonight, not Oriental.

Next up: Shrimp AND squid in an Italian manner - well, if that doesn't say bouillabaisse, I don't know what does.... (okay, okay... in a French manner)

Sure.  One condition - you do all prep and all cleaning.

Chop1 pound bacon. Fry until crispy, drain off fat, cool bacon on paper towels.  Meanwhile, chop water chestnuts into 1/4" cubes. (This way can start with sliced.)

Should have equal proportions. Dice up shredded Swiss. You need about 1/2 of the amount of the water chestnuts.

Mix all with ...... TRUE Mayo - NOT "Salad Spread." Use half of the amount of the Swiss.  Just enough to hang.

Place rounded teaspoon of mixture on water crackers. Broil until bubbly.  Serve warm!!!!!  (Cold bacon fat? meh.)
