The diabetic nutritionist, my dr, and the nutrition advise line, says eggs are perfectly fine to have even every day, In fact an appropriate breakfast for me per the diabetic nutrition class I took, and my dr would be 2 eggs one piece of toast and a half an 8 ounce apple. It's just very boring to have day in and day out, so I am not actually inclined to have it every day. I like variety.

Considering that eggs are high in cholesterol (bad for you if eaten every day) and relatively low in protein, I'd rather put My efforts into preserving something healthier to carry Me through a longer period, such as fish, soybeans, etc, along with vitamin & mineral-rich vegetables and fruits.

A better option would be two eggs, black or pinto beans, and berries. Bread is empty carbs and apples have been bred to now produce a lot of sugar.

My problem with nutritionists is that they've never lived through the conditions that they preach about. It's all just repeating what was in a book.

Mineral oil is a petroleum product. Do you really want that on your food?

I was going to say, seems like Olive oil should work just as well.

I would think that Coconut oil would work even better since it becomes solid below 76 degrees and Walmart carries it.

The link that I gave in my previous post says that you shouldn't wash the eggs because apparently when they are newly laid, they are covered in a natural protection called a bloom. It states the pioneers rubbed them with lard, butter or gum water and would also place them in large barrels of salt.

According tests done by Mother Earth Magazine, store bought eggs rotted pretty quickly since they were washed and unfertile, but fresh farm fertile eggs lasted at least 120 days covered in lard.

If you have chickens and at least one rooster you will never run out of eggs . If you have a good pen you will never run out of chickens .
The rooster is there only to help make more chicks . My ex's chickens lay an egg a day . I love those girls ! Fresh eggs every couple of days
becuse the kids don't eat eggs that much .

Roosters are a PITA. We can have chickens where we live, but no roosters since they're a noise nuisance.
