Athena, ome of our canned stuff its been 6 plus years more like 12 years lol. None of the cans show signs of botchulism, or rotting tho


A salad I get from where daddy works has garbonzo kifney n green beand n I love the beans.

Shit, some of the things they bought an stocked up on in the 90s is still in their pantry. Haha, ok not just some a lot. They refuse to throw it out, but when they r not looking I yhrow it out

Nutmeg used to be brought out from the back of the shelf only during the Holidays. These days I'm using it more and more.

They call them....french fries, I think.

Stir fries are one of the easiest and healthiest dishes to make and you can pretty much use anything that you can think of in them. I love to make stir fries with fresh veggies and stirfry them only until they get a little soft but still crunchy and still full of vitamins. And you don't need much oil at all. Most of the time I either use light olive oil or Pam spray. Throw in a little lite sodium soy sauce and some ginger and it's yummy.

Literally, you can throw anything you like into a stirfry.

Can you eat rice? I'm not really sure with diabetes how rice works but if you can have it, it's amazing because once again, you can do so much with it! Just steam it and maybe add some spices or a little milk and just a tiny bit of sugar and you have a healthy breakfast or use it in your stirfry. You can steam it, cook it, bake it...anything.

I have a Japanese seasoning that I love. It includes seaweed, sesame, ginger and quite a few other spices. I just steam some rice, throw that on top and I have a yummy lunch.

Rice is such a small portion one third of a cup and it takes up a whole carb count I prefer not to. I'd rather have more bang for the buck and eat something that i can feel like i ate.


I used to love rice with a little butter and cinnamon in it! it was almost like tapioca pudding. It was extremely quick to cook in our tiny lil rice cooker too.

Well then try stirfries. Healthy, light and easy to make.

And salads. We eat quite a lot of salad around here. And remember spices are your friend. Instead of frying or saucing foods, rely on spices to liven up your meals.

Frozen green grapes are my nephew's and mine favorite. You try fighting with an 8yo over a bunch of grapes.

When I was crash dieting back in 85, I ate grapes and salads. I avoid salad dressing but I did put ham and boiled eggs in the salad. Up my running to 2 miles instead of 1. Lost 10 pounds in 10 days and was able to get into the services.

I just found a couple of great recipes that substitute cauliflower for rice. The carb count is much lower and if you grate the cauliflower it has the same consistency as rice. Maybe you could try that and add it to the stir fry. I'm going to be making a healthy version of chicken fried rice with it.

You can also make cauliflower mashed "potatos" and I saw a recipe for buffalow cauliflower Daddy might like.

You can easily make homemade salad dressings. A little bit of olive oil and red wine vinegar or rice wine vinegar. Add in some scallions, salt n pepper and mix. Or another recipe I use, honey dijon mustard, white wine vinegar, garlic, scallions, salt n pepper, and olive oil. It's like 40 calories and no added sugar(Other than the honey mustard. You can use regular dijon mustard instead too). I add that to a salad of baby spinach, half a strip of precooked bacon, a boiled egg, grilled chicken, tomatoes, onions, cucumbers, a tiny bit of parmesan or mixed shredded cheese, and thin sliced almonds. Then I have a greek yogurt or cottage cheese. Sometimes I'll go "crazy" and have popchips or reduced fat wheat thins to have something cruncky (but those are carbs).

Honey is a great additive to any dressing. Adds a little sweetness without a ton of calories.

Although do be careful nutmeg is a psychoactive in high enough amounts.

In the summertime I love to freeze all kinds of fruit and when it's really hot outside it's nice to just eat frozen to cool off and it even can make some of the fruit taste sweeter because the fructose solidifies.

I crunch that shit down raw, no dressing no fucking with no nothing lol.

And all they are is lettuce, cucumber, avocado, tomato's some seeds, and some garlic salt.

Maybe every once in a while chicken or beef steak type strips in it. The kind you can buy pre cooked an you just put in your meals. mom loves those things.

You can have as much salads of that kind as you like. Go to town, eat your fill.
You might however, put just a bit of oil on them. Some of the good stuff is exclusively oil soluble.

But how about making those steak and chicken strips yourself? Really not difficult, and cheaper as well as better tasting.
