I found this out when I had a boy forward a shipping confirmation. The email displayed my full name and address. It was a shock to my system but, not a big deal. OP, If you're super nervous about this, stick to gift cards. You can get around this by setting up an Amazon Locker, which you can find in your account settings, Add A New Address. Also, OP, it's worth mentioning that PayPal will expose your complete first and last name to anyone who sends you money that way, unless you set up an account in a way that probably violates PayPal's Terms of Service. (I.e., not worth doing, because they can shut down your account and keep the money.) So just assume that anyone paypaling you money knows your vanilla first and last name.
