When I choose the smaller, Mexican mangoes, I want them completely, nicely soft so that it gives a little when pressed (but not mushy or too soft), and sweetly fragrant at the stem end. I have found the more sweetly fragrant a mango, the sweeter the taste of the fruit. There's another mango (don't remember what kind) that's larger and has red on it. All of the red may not go away even when ripe, on this one. If you buy mangos unripe, DON'T put them in the fridge. Leave them out on the counter to ripen. Once they are ripe, they can go in the fridge to slow down further ripening. To speed up ripening, put them in a paper bag and close it's top.
