It's my Dad's birthday. He claims to not have a favourite type of cake. What shall I make?

He isn't a fan of chocolate cake (chocolate chips or decorations are ok) and I only have two hours alone time to make it. It can take longer than that, but I will have a toddler with me the rest of the day so can't do anything delicate with her around.

Does dear old dad have any problems with alcohol? If not, then my vote is for rum cake... the best of all cakes!

I have no idea how long it takes to make, though. My cooking skills consist of pouring milk on cereal, heating spaghettios on the stove, microwaving hot pockets, and occasionally scrambling some eggs.

Alcohol is fine! He does like fruitcake - I've only ever made Christmas cake which needs to be made far in advance, do fruitcakes work made the day before?

Mmmm I have a great recipe for coffee and walnut cake that uses nearly two pounds of butter - good job my dad is thin!

I would make an apple crisp, a rhubarb crisp, or some other coffee cake that he can take home with him and use (unless you make a pie) rather than the stale angelfood thrown away after a couple days.

Oh I didn't even think of pies... apple pie, custart tart, rhubarb crumble...

Whatever, get with it kid, this is at least the 90's now, if not more, someplaces. He is a big boy, and will get over the cake thing (and probably with a sigh of relief, that he finally gets something that he likes to eat).

Carrot cake is a nice change of pace. I wouldn't do it w/o a food processor to grate the carrots, though. For the cream cheese frosting, I use the lowest of the suggested amounts of powdered sugar.

Carrot cake keeps well for at least a few days - I don't know how long for sure as it always disappears before it gets stale.

I'm probably late but the best of all for me is the Mille-feuille with strawberries in the the cream, it takes a lot of time I know... but if that's the problem maybe buying commercially made puff pastry won't be such a bad crime.

Mmmmm...that's my favorite, with cheesecake a close second!

Sometimes, the best birthday cakes aren't even cakes. Pies, brownies, giant cookie...they're all good.
My favorite "traditional" cakes, though are either ones with a fruit mousse filling or a jello poke cake.

Its a toss up here. Between an pineapple upside down cake (my dad's favorite!) and a 12 layer chocolate cake. Both are delish.

this is so good and takes less than an hour

so here u go

it is a fruit cocktail cake

1 can fruit cocktail do not have to drain the liquid
1 cup flour
1 cup sugar
1 tsp salt
1 tbs baking powder
1 egg

this can also be mixed in a 8x8 glass baking dish

put all of the ingredients into the dish and mix with fork
then put egg into the dry ingredients and mix
then add the can of fruit cocktail and blend together

put brown sugar over the top just to lightly cover the mixture

then put some pecans in zip lock bag and close and take rolling pin
and make then into small pieces or purchase them already into
small pieces

then add the pecan pieces on top of the brown sugar

put into 350 degree oven for 50 minutes
the time might vary depending on the altitude where u live
when close to finishing dip toothpick into the cake in various places
to make sure it is done

u can also put whipped cream on it after u cut it and put on plate

all in all it is so good and u can take this to any party and people will
just scarf it down

let me know how it goes
