I know...I love going to speciality stores to get a rasher when I go to Austin or get a thick cut when they go on sale. Mom buys a flavored bacon, center cut. The maple flavored one drives me bonkers, making me want pancakes.

1lb = 450-500gms. That's enough for four people in my house, and I'm in the UK.

Freedomdwarf you keep banging on about streaky bacon not being a good cut of meat. You need to change where you get it from. I use it for all sorts of stuff and it's great. as with everything; quality counts.

It's sort of neither yet all of them. I'm neither Jewish nor Muslim but I find the thought of eating pig meat revolting.

I believe they're filthy animals that live in their own mess and that can't be healthy.

As far as taste; I have to admit for yearning for a nicely done pork chop, every once-in-a-while but all I need is to think about that nasty, shit-living pig and I'm relieved of that desire.





Pigs are naturally forest animals so when raised without shade they need a way to keep cool so farmers kept them in muddy yards so they could roll in the mud to cool off. Give a hog room and you'll have a clean animal lying in the shade.

I'm not saying streaky is bad quality, I'm saying it's one of the cheaper and fattier cuts of bacon compared to many other cuts of bacon that we can choose from over here.
Alas, those poor Americans have to go to a speciality butcher/shop to get anything but streaky - they have very little choice.

I was looking for salt pork to make a batch of white beans and it was almost impossible to find.

maybe I wrote it badly, he noticed a difference in the fat amount, I don't think they are keeping pigs on a diet so if the amount of fat changed it's becuase there is difference in the cut the grocery store he goes bought or if it's packed his favourite made it uses. I came to this conclusion because reading the difference between bacon and pancetta I read the former can be also from a higher cut closer to lion, that we normally use for BBQ or stewed.

naming lardo was a joke, I mean frying it in a pan is a criminal act.

Jlf....regardless of the number of people in your home....

The minimum number for bacon is....1 lb.

If friends show up....more bacon.

You're incorrect. Pork in the United States has become increasingly leaner due to the low fat craze here. To the point where pork chops have to be brined or marinated to keep from drying out.

not completely true, in my region I have a really hard time to find "guanciale" (the cheek cut) to cook carbonara o 'a matriciana, I can find only the packed one that's never good quality.

that makes sense, for pork farmers I mean, reducing consumption eating less pork would affect the market so they sell a lower quality (in taste) product as better quality as it should be healtier, that talking about pork's fattest cuts it's kind of a joke.

I realize this is going to be a dreadfully unpopular suggestion (and that's all it is, a suggestion) but Morning Star brand makes a very good "fake" bacon alternative. If you are trying to lose a few pounds or are just being more mindful about cholesterol, ect, it is a convincing substitute. It's at Walmart (shudder), Target, ect. I hope that helps!

Actually pork fat is one of the better fats. Certainly far better for everyone than the trans fats.

It's a soy product loaded with chemicals to make it taste like meat.

Then there's the great "Cholesterol Myth".

Pigs are raised n their own mess in big feeding operations. Pigs would just as soon be clean and not mucky.
