I killed my slave's favorite frying pan (burnt it). It was a stainless steel Weaver with an extra thick bottom and Teflon coating. I have cast iron pans, but she isn't too fond of cooking in them. So I am looking to buy her a new pan.

I have no experience with all these newer non-stick resin coatings and green pans. Any suggestions for great non-stick pan?

That would be a good universal gift solution. But dhe she already has access to my cash. I should have said "slave/wife" to make things more clear.

I want to give it as a gift, an upgrade to make her cooking experiences better. I have been reading a lot about the new pans. The have all kinds of new non-stick surfacing and the manufacturers all make the same claims. So I resorted to amazon.com and started reading feed back. Seems like anything over $30 or $40 has good feedback. That left me with the impression that if I bought any of the newer non-stick surface pans that cost more than $30 I should be doing ok. Stopped in hear to see if anyone had a specific suggestion from personal experience.

Does she have a cast iron black skillet?
It's old school but it cooks soooo damn good!


If she's wanting something newer, get the one that's green, I forget the name of it, but it really is amazing. My mom has one, she swears by it. It's the one advertised on TV.

The cast iron coated in enamel is pretty good stuff, and a little bit of both worlds.

I lost two cast iron pans in my move from Florida and replaced one of them with a Bobby Flay pre-seasoned cast iron skillet from Kohl's. I find it is more non-sticky than my older pans.

Sure, you have to use some oil with cast iron, but I believe the superior results are worth the extra calories.

If you can find a Griswold cast iron skillet that would be great if she likes cast iron. As with any collectible, there are fakes being made. If the cooking surface isnt smooth or it coats $10, it is probably a fake.

My new favorite 2nd largest is a Griswold. Mom was cleaning out her barn and found in my my stuff that I had stored there about 12 years ago. I think it used to be my grandfather's.

My largest is a Lodge, and my second to smallest, and least favorite, is a Caphalon that I believe I got at Target. That one needs a lot of oil and doesn't cook as evenly.

I used to have a non-stick wok and tossed it in favor of cast iron.

Unless they've stopped making the one that was burned, buy her the exact. Same. One. If they don't sell it anymore, take the burnt pan to your closest culinary/kitchen supply store and ask them what is the closest thing they have to it and buy that.

I know you're looking for opinions on what works best for folks but since it is all opinion, Mine is not to mess with a woman's cookware. She knows exactly why she preferred that one.

I have an omelet pan from Swiss Diamond, that I considered the best non stick pan I have, however, there are other very good non stick pans at more reasonable prices. I suggest cooking.com as a place to start.

If you have an induction stove, you need to get pains specifically for that type of stove.

Go to Bed Bath and Beyond. Calphalon is now making frying pans with ceramic coating inside. A set of 2 costs about $50. Calphalon is known to make a good cooking equipment. I got my first frying pan with ceramic coating a year ago. Loved it so much that I gave away my expensive frying pans. Living in a motor home you only have room for so much stuff.

I agree. I am *serious* about my cookware, and like to buy professional grade for those things I use often.

My big non-stick frying pan is a "Bakers and Chefs" that I got at Sam's Club for around $50.

I like copper bottoms on stainless steel for pots, but again that's *MY* preference.

I do think it's very sweet you want to buy it as a gift.

Chatte - how long have you had it and how is the coating holding up? Would you add a link? There was a big price difference on the one I found so I don't think it's right.

I tend to use stainless steel. My husband has fried a few of my pans and my SS ones are the only ones I can salvage. They're the safest option for my house.
If I were to go outside that, I'd get a cast iron like the others recommended, but that's just me.
If my husband were to replace a pan instead of giving money or gift card to replace it, I'd be thrilled. And I know he wouldn't just go out and pick the first thing he saw. He'd do his research much like you're doing.

I'd go to a restaurant supply house and buy 3 or 4 nonstick pans for the price of 1 name brand. Non stick is mostly good for cooking fish and eggs so you don't need much more than a pan shaped object with a resin coating. Since all the coatings wear out I'd go for restaurant grade. Last time I bought them I got 4 omelette pans for around $15 each.

I am pretty leary of non-stick, especially the cheapie non-sticks.. I don't want those chemicals in my food! the ceramic coated I am curious about but again, wonder if they can eventually do the same thing as the non-stick stuff.. I don't trust manufacturers much, in that respect.. I like cast iron but my main complaint about those is their weight.. they are very heavy to me.. so far I tend to stick with good quality stainless steel with a thick bottom (preferably with the copper centers)..

I know that you want to give her a new one as a gift but I would take her on a shopping trip and let her decide.. some womens (like me) can be picky, picky, picky.. [:D]

I agree with taking her to the store, otherwise it's a PITA to keep going back and forth with it. I swear by my old Griswold. It was owned by my mom, who got it from her mom, who in turn got it from her mother who bought it new in 1907. Once it's been cured, and if you keep up on it, a good cast-iron pan last forever (relatively speaking).

If you're gonna get a 'greenstone' pan, buy the real ones, not the knock-offs. My neighbor's fiance got one, and it lasted one weekend of average use before the coating came off in three big chunks. I don't know the OEM on them, because frankly I don't need a pan now, nor do I think I ever will, unless something happens to mine.

I bought the NuWave skillet (with a nonstick surface) system thinking it would give me temperature controls that my stovetop skillet does not.
One of them burned the nonstick surface IMO when I set it at top temperature to cook a steak. I know the nonstick surface changed color. The company sold it with a one year warranty. When I wrote them they sent me instructions on seasoning the pan, but failed to live up to the advertised guarantee.

It has been a bad choice as far as I am concerned.
