I have a big home grown salad with veggies and herbs from the garden, fresh tomatoes warm from the sun, thai basil with purple flowers, organic flower petals, and whole nasturciums, italian parsley, and homemade Italian with balsamic and avacado. We could meet in the middle.
Oops, it's 5 pm, we'd make to the middle by about 7 pm.
Another time perhaps.
 


Irish...it has a while to cook yet. Meeting in the middle would be closer to 9 or 10 lol. You know me, I've been up since 330am so a bit late for me. Definitely next time.

All I hear is caprese, caprese, caprese...

Where's the love for a good panzanella, eh? ;)

Recipe for the ho's at home:

4 cups French bread cut into 1-inch cubes and dried overnight
6 slices bacon, cooked, chopped, drippings reserved
2 cups halved grape tomatoes
2 tablespoons oil, for searing
2 cups halved yellow pear tomatoes or roughly chopped heirloom tomatoes
2 cups chopped romaine lettuce

Vinaigrette:
1/4 cup red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil
1 tablespoon chiffonade mint
1 tablespoon chiffonade basil

Toss bread cubes in the bacon drippings. Sear the halved grape tomatoes in 2 tablespoons of oil, cut side down, until caramelized about 5 minutes, set aside.
Combine red wine vinegar, salt and pepper in a bowl, slowly whisk in olive oil in a thin stream until emulsified.
Combine all tomatoes, bread, bacon, and lettuce and dress with vinaigrette, toss well, garnish with mint and basil and serve.

BTW - dinner was tasty and pretty. And I have leftovers...

Too funny because it was a toss up. So I pretty much had panzanella for lunch with some of the bread, asparagus, and another artichoke, left from my veggie dinner the night before along with some big beefy heirloom tomatoes. I lucked out on some gorgeous tomatoes at the farmers market last night and had a craving to use the Bals thus the caprese. It's too damn hot to "cook" thus the state of my grill night. I'm thinking Italian beef with some of the leftovers later in the week.

I obviously replied prior to your edit. I usually just leave my bread cubes in the oven over night with the light on and a quick toast under the broiler and a rub with a garlic clove. Bacon...egads I haven't had real bacon in ages. Although it might be interesting to crisp some pancetta with the bread cubes. I ran the tomatoes glazed with the balsamic under the broiler last night as well with the stuffed mushroom.

If I don't stop sneaking in to "taste" the caprese there isn't going to be anything left by dinner.

My dinner tonight was prompted by some of my old purveyors giving me "going away" presents since I've left my kitchen in favor of Her... So, it was unusual in that regard. And since it's a shame to have beautiful things go to waste...

And what you've said is what I love about Italian cooking the way it's actually done - it's all about what feels right at this moment and having a few really great ingredients...

What am I doing? I'm preaching to the choir... You know what I'm saying... pah!

Ah I must have missed that resolution on the what would you do thread you started on choosing between a restaurant and Her. Frankly, the right woman only comes along once in a lifetime.So what other choice could there have been but Her.  A kitchen, a restaurant can happen anytime. Congrats by the way.

I'm not professionally trained. I have no clue about the correct or "right" way to do anything in a kitchen. I just love good food. I love to cook and all that chopping, crushing and smacking around in the kitchen truly relaxes me after a long hard day. Food and the passion therein is truly a wonderful thing. I'm just a fellow foodie in a big bad way.

I'm trying to find the person who posted on the potato packets under the steak. I'm going to have to try that with the rib roast that's grilling now. Brilliant idea. *head smack*

After reading all the great stuff being cooked up, I embellished my salad with ripe haas avocado, red and yellow pear tomatoes from my garden, big fresh, torn basil leaves and a tiny bit of jack cheese with jalapenos. Balsamic Italian homemade dressing, and it tastes fantastic.
 
On a salad binge this week.

It's just too hot to cook even for So Cal. Our weekly farmer's market downtown has been having some great things lately and I go late to get the great bargains. I got the mushrooms for next to nothing and the tomato guy just didn't want to put them back in the truck so I have 3 milk crates of them for free. I'm going to be doing alot of sauce in the next week for freezing. I really miss the sweet corn back in IL though. The stuff here just doesn't compare even when I add a touch of milk to the boiling water.

Now I'm thinking of a bit of rare cold beef salad for lunch tomorrow.

Most corn varieties grown in SoCa tend to do best with being grilled... and with a bit of butter, salt and ancho powder.

Actually, the thing that was probably best about dinner was the smell of it when I walked into my house...
(yes, this is an inside joke about marking nasal passages as a part of your territory... )

I had grilled burgers that I had mixed in some dijon and some honey cranberry mustards, spices and then made patties. I heated up leftover potato pancakes from last nights dinner and some frozen mixed veggies. We polished off the Peanut Butter Stripe pies I had made for Sat night as a dessert.

awww, fly me over! a former MN'an who must have put up thousands of jars of tomatoes. sweet corn... droool...we've got crappy stuff that they peel half the husk off so it's gone starchy by the time you even SEE it in the shops... i really need to get to the greengrocers after reading all this.

and where's the craisins for the salads???

Sweet corn has been great here this year, the best in a couple. I love it just plain, no butter. MMmm I think I need to find a stand tomorrow and see what I can get...

Mine was unbelieveably good. The roast came out perfect, and the caprese was yummy. As for corn I usually grill it with some chile lime butter. The milk and sugar trick is an old midwestern one.  For dessert I halved some white peaches and rounds of fresh pineapple. Brushed with a bit of either simple syrup or clover honey (mint works well too) and some butter and threw them on the grill as it was cooling down. Thread a couple skewers through them to make turning them easier. Best served still just a touch warm with a scoop of cinnamon ice cream. Truly a bit of manna from heaven.

Does that inside joke have anything to do with your being nostril fucked from a previous thread?

Ugh craisins...horrible things. Ah my fellow former midwesterner! I'm trying to snooker my parental personage to pack a few ears of late summer corn in a box and overnight it. Or freeze some for my visit in late Sept. Of course, I'm greedy and selfish and would prefer to have it overnighted. I'll let you know if I succeed.

please do. by then i might be feeling better and appreciate the vicarious pleasure more! i had cheerios for dinner 'cause it was least effort and comfort food. but i want the real cheerios :(
