The main thing I try to emphasize when I down the chain places, is that when you eat at ''Chef owned'' places, it's usually fresher ingredients instead of pre-packaged, pre-seasoned, and pre-portioned stuff you get at the chains. Many of the places in Portland I like to eat at, have their own little sustainable spice and vegetable gardens right on the premises - So your getting fresh, organically grown spices instead of something that's been mashed/ground up, with preservatives and sitting in a jar for eons. The other thing I like about chef-owned is the money stays local instead of going into corporate coffers. JMO - R PS - It always gives me great pleasure to take someone whose always eaten at the chains and introduce them to fresh ingredient /chef owned, with local art hangn’ on the walls - They're changed forever.
