Some being more potent. The fermentation process is the yeast carbonating the beer. Of course other things happen during this time as well. With my beer, that is what I am looking for though. It gives me that head on my beer. Of course also add's my aocohol. With my beer if I ferment too long it can ruin the batch. So, it all depends. Which is why I'm not thinking of how I could up my alcohol without messing something up. Adding sugar sounds like an easy fix but with everything there has to be balances. Too much and you have crap, too little and you have crap.
