Me too - except I give them to the pup.

And I read somewhere that you should only freeze turkey meat for 2 months.  Anyone else heard of this?

I cannot believe, as I think others have implied, that with all the freaky perverts which the CM membership comprises, not one kinky suggestion for leftover turkey has so far been made.

Now far be it for me to suggest such usage, since said bird is clearly held in high regard over there by the evident restraint from such proposals here in this thread.

I look forward to the end of Thanksgiving, so that freed from the social pressures which require a certain degree of reverence towards it, we can all read what you'd really like to do with the leftover turkey meat.

I've already been eyeing up the carcass this morning for the stock pot.  Makes great stock.  Lunch for the next couple days will be smaller versions of the meal yesterday.  Maybe breakfast as well...hmmmm....  I love the whole turkey dinner thing but only make it once a year.   Christmas is always roast beef and Yorkshires with trifle, mince pies, and a Yule log for dessert....probably crab dip and shrimp mousse for appetizers.

I don't plan on allowing the absofuckinglutely outstanding pecan pie (did I mention it was good?) last that long             

Regarding the two month thing - in general, you shouldn't keep anything in your freezer longer than about 3 months - it doesn't necessarily go bad, but it's certainly going to go past it's best.   If you can't eat it all in 3 months...don't buy such large portions.

I am with LadyE and want to know what Tikkie was thinking.

As for the other stuff. I made two turkeys so family could take alot home with them. The rest will be used as inspiration hits.

Turkey Salad Sandwiches

2 cups diced leftover turkey (or chicken)
1/2 lb bacon cooked and crumbled
1/2 cup Miracle Whip or Mayo (a little more or less to taste)
1/2 cup chopped sun dried cherries
1/3 cup coarsely chopped pecans
1/4 cup chopped green onion
1Tablespoon sugar (a little more or less to taste)
1/2 teaspoon nutmeg
1/4 teaspoon cracked black pepper
1/4 teaspoon salt
sliced very sharp cheddar cheese

Mix all ingredients except for cheese. Let stand overnight in fridge. Use generous amounts to make sandwiches on your favorite bread, toast, croissants or rolls. Top with slices of cheddar.

And here's a recipe for those of you who can't tell exactly when a turkey is done.

BAKED STUFFED TURKEY
  6-7 lb. Turkey
  1 cup melted butter
  1 cup stuffing (Pepperidge Farm is good.)
  1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT)
  Salt/pepper to taste

  Preheat oven to 350 degrees. Brush turkey well with melted
  butter salt, and pepper. Fill cavity with stuffing and popcorn. Place
  in baking pan with the neck end toward the back of the oven. Listen for the popping sounds.

  When the turkey's ass blows the oven door open and the turkey
  flies across the room, it's done.

Sweet Potato Turkey Mole Recipe


Mexican TurkeyIngredients:4 turkey thighs, skinned
Salt and ground black pepper, to taste
1 onion, diced
1 1/2 pounds sweet potatoes, peeled and cut into chunks
1 box (about 17 ounces) mole cooking sauce, such as Knorr, or 1/4 cup mole paste dissolved in 2 cups water
1 cup salsa, any heat level
1 cup water
2 tablespoons chopped cilantro

Directions:Season the turkey with salt and pepper. Heat the oil in a dutch oven over medium-high heat and brown the turkey on both sides. Remove to a plate. Add the onion and cook until it loses its raw look. Add the sweet potatoes and continue to cook until the onion and potatoes begin to brown. Add the mole, salsa, and water and heat to boiling. Reduce the heat so that the liquid simmers. Return the turkey to the pan, along with the juices that have collected on the plate. Cover and simmer until the turkey and potatoes are cooked through, about 45 minutes. Stir in the cilantro before serving.

Makes 4 servingsTurkey is the most traditional meat to use in mole - this recipe twists tradition by adding sweet potato.

Very Simple Leftover...and great for watching those football games. Slice turkey as if you were making a sandwich, butter both slices of bread, and put the turkey on the UNbuttered side of the bread. Top with other slice, butter side out as well, and grill it, as if you are making a grilled cheese sandwich, but using turkey meat instead of cheese. Serve with pickles and chips.

Hoping to get some suggestions on "using" the ol' bird in the Biblical sense, eh?

To me, turkey isn't worth eating without mashed potatos and gravy... i cut down the remaining turkey into small pieces, nuke it a minute or so to take the fridge chill off, then simmer it in the gravy for a few more minutes. Some of those recipes sound like a heck of a lot of work!

After I’ve eaten more turkey sandwiches (which, btw, include my lime/jalapeño/cranberry relish AND some turkey dressing (really, LOL) than is probably healthy…   I like to make turkey quesadillas:
Turkey
A chunky, smoky, chipotle salsa with corn
Black beans or refried beansA bit of cheese
Minced jalapeno

Sliced avocado

Lots of shredded lettuce

Fresh cilantro-chopped
All ingredients placed on a warm tortilla, flipped once for a crispy inside.  While the other side heats; stack goodies on one side; fold over.  Flip once again after folding to get all sides slightly crispy.  Yummmmmmm (and it hardly tastes anything like TG dinner!!!  I like that part)

At this point, it is worth reminding readers that the trapping and cooking of moles is subject to stringent controls, the breach of which may render one liable to a fine or imprisonment or both. Also, moles dont taste that good and there's not much meat on them, so its hardly worth the effort or the risk.

Turkey Vegetable soup (you use up leftover veggies from your relish tray this way) or Turkey Tetrazzini.
 
8 ounces thin spaghetti, broken into 3-inch lengths, cooked, rinsed, and drained
1 1/2 cups shredded Cheddar or Swiss cheese, divided
1/4 cup Parmesan cheese, divided
2 to 3 cups diced cooked turkey
1 tablespoon butter
4 ounces sliced mushrooms
1/4 chopped cup onion
1 can cream of mushroom soup
1/2 cup chicken broth
1/4 cup dry sherry
Salt and pepper, to taste
 
Cook the spaghetti, mix the rest of the ingredients in with it and bake in a 350 oven for about 45 minutes. Serve with garlic bread and salad.

Something really simple that I do is make Turkey nachos.
You take pieces of left over turkey (or chicken)
1 pint of sour cream
1 pkg of hidden valley ranch dip mix

you mix it all together and then spread on tortilla chips
cover with shredded cheese
japalenos optional
then heat in the microwave until the cheese is melted.

My favorite way to use leftover turkey is to peel it off the plate in the fridge and shove it in my mouth
