Other than some condiments that are in the door, i don't keep alot of stuff on hand.  It's only me and the kittens at the moment, i have alot of frozen stuff i keep more of.
The Man is coming home on Sunday, there is a bit more in there now than normal.

i got some boneless chicken breast in there but need some ideas of what to make with it..i have had my fill of blackbeans w/ rice n chicken..any ideas ?

Do you like chicken parmigiana?  I made it for my Dom the last time we were together and he enjoyed it.

Chop some onion, mushrooms and garlic. Fry slowly until browning. Cut the breat into slices and throw them in.
They won't take very long to cook. Just a few mins. Add some seasoning and some cream, milk, yoghurt, creme fresh or whatever else you have lurking. Serve on a bed of rice.

yes i do like it...that's a good idea... i was thinking something Italian...then I thought about soup....i love chicken rice soup

cut chicken into cubes, mix with one bag frozen mixed veggies 2 cans cream of chicken soup and 1/3 cup of sour cream. Top with a prepared boxed stuffing mix and bake in at 375 until chicken is done (about 30-40 minutes) cover with foil during baking if the stuffing starts to dry out.

He can't put them in the freezer until after he grinds them up and stuffs them into sausage casings.

You could pound them flat, top with your favorite stuffing, roll them up and place them in baking dish seam side down, top with gravy, cover and bake 1 hour at 350.

or

slice a "pocket" in them, stuff with ham and swiss cheese, seal with toothpicks, dip in egg and water and then breadcrumbs and fry slowly in oil or spray lightly with cooking spray and bake in the overn.

Sometimes i  cook  chicken breasts...  in a little bit of olive oil, with stewed or fresh tomato, garlic, and  pasta.. (tastes great with sausage too)
