ORIGINAL: MasterNdorei How about some homemade lasagne... i did the roll up style this time, aren't they gorgeous? Will you share your roll-up recipe with me? Mine never seem to come out the way I'd like. Regular lasagne isn't a problem. [sm=preen.gif] The secret to roll up lasagna is to pull the noodles when they are just pliable. This way they do not tear, and hold up better as you roll them. Make sure the sauce is a little more juicy than usual, so the noodles continue to cook as they bake. i only post foods that i actually have on hand, and am always happy to share recipes & techniques. Lasagne can be any kind online (i aim to please), but the real time roll up lasagne this time had a spinach ricotta filling (super easy just add an egg to a small container of fresh ricotta, add a truckload of steamed spinach, dried Italian seasonings, some mashed roasted garlic*, & fresh grated romano). i used whole wheat lasagne noodles, topped with red sauce, mozzarella, and toasted pinons. OMG The pinions with the whole wheat noodles were an incredible combination. But the tips i just gave you work with any recipe. :) *roast the garlic the low fat way... in your microwave. Put a cluster in their skins in for about 10 seconds. Add 5 second intervals until the cloves are soft. They will squeeze out of their skins with ease, have a somewhat roasted flavor, without the fat of drizzled oil, or having to heat up the oven for 30 minutes. More truffles that taste like fudge anyone?
