A couple of things...hence the FR.

On wood, and Cedar:  Rich, I love cedar planks.  But NOT for smoking...I think the wood is too rich, and I suspect its really bad for you (that pine-cedar-phenol thing...?)  But get me a fresh...I mean REALLY fresh Lake Michigan whitefish, fillet it, rub the cedar plank with some oil or butter, and broil that baby maybe 5 minutes a side...keep it moist, turn it....and then pipe hot garlic mashed potatos around it....UHhhhhhhhhhhhhh   better than sex.  MUCH better, actually.

As for the lovely missturbation and her attempts to steal our attention from the food (its ALL about her, isn't it *GRIN*?)  Guys, you are taking cooking advice from a woman who represents the culture of the worst food in history.  Have you ever eaten in England?   MY GOD...bangers...mash...puddings that aren't anything like real pudding (let alone "black").   KIDNEY pie, which smells like....well....you know what kidneys do.  The history of Western civilization is basically the Brits attempting to find decent food.  Look at it -- Africa.  India.  The Orient.  The New World.   They sailed around the world looking for FOOD.   And indigenous people who could cook it.

The Tri-tip "roast" is a great cut of meat, relatively cheap and very flavorful.  You need to marinate it and cook it for a bit because the fibers (which give it great flavor) are tough.  Indoors, I like to put it in a Nesco or similar cooker.  Outdoors it is perfect on a rotisserie spit, above good hot oak or hickory coals.

And if your local butcher doesn't have a clue,  you can get it fresh at most Trader Joes.
