That's an important concern these days if you are not sure where your dish has been previously. I'm not a fan of having tortellini. I've had less problems with ziti -- ziti tends to be more obedient and less pretentious sounding. Ziti knows its place. Ziti doesn't whine about water temperature, taking it to see The English Patient or the other pasta dish with the big fresh, firm tomatoes you played with earlier in the week. I tried tortellini when I was first starting out but really, after dealing with it trust issues left by a former chef, limits on what sauce you can use, etc. -- you might as well be having spaghetti with slices of white bread. Throw the misbehaving tortellini outside and let it find someone or some thing who will put up with it or is desperate enough to not care. Like I said, get some ziti. I've been cooking with ziti since I was too young to mention on here. My ziti knows its place -- and knows it better behave or it won't get any sausage.
