I can sympathize with the feeling. The process sounds incredibly labor intensive. If you compared the labor you put into the task, with what the hours of your time are worth, it would probably equal some incredibly expensive apple butter, and you'd be way money ahead to store buy it. However, if you factor in the memories your kids will have in the future, every time they taste apple butter from anywhere else, and remember you making it for them, I think it is probably the best value in the world. This time of year, the scent of apples, the taste of apple butter, all will keep your presence vivid for them, and for your grandkids, in the stories they tell of "back when I was a kid". Truly, Celeste, what a terrific legacy you are making!
