mya, I stopped eat all meat except occasional seafood {and I hope to stop eating seafood SOON}, about 15 years ago. I am by no means an expert on vegetarianism, but I have a few suggestions. Vegetarian Times - Great Food, Good Health, Smart Living wonderful magazine, you can read it online and it is at most libraries, wonderful source of information. I did not stop eating ALL meat at one time. First, I gave up red meat for a few weeks, then I gave up chicken for a few weeks, then I added all poultry for a few weeks, so I did it in steps. Once you give up one type of meat, it is easier to add the others. Please start going to great websites and start reading books on vegetarianism AND learn how to cook delicious recipes that are meatless right away. The main mistake I made was to stop eating meat, and not learn how to cook enough meatless meals. Also, make sure you plan your sources of protein DAILY, you have to eat and replace the protein you won't get from food. This is critical to your health and well being, you can't just stop eating meat and NOT PLAN SOURCES of daily protein. I stopped eating meat and started eating way too many carbs. Also, this is a great time for vegetarians, there are so many delicious products out there. When you are feeling lazy or don't have time to cook {like me 85% of the time}, you can eat morningstar and many meatless, tasty products. I could go on and on, and I can email you some recipes and ideas on the other time, if you are interested. Good luck! I am on my way out in a few, and I plan to stop at the store and grab some morningstar veggie hotdogs and I love them with canned vegerarian chili, mustard and ketchup. Chili dogs! I fix a lot of things with the meat substitutes and you would never know it is not meat. I can make a fierce 5 layer lasagna with meat substitute! Last thing is this, do this totally for you and be prepared to live "differently" than most around you. I have gone to family members to eat, and ended up with a plate of veggies and potatoes. But ya know what! I don't miss the meat! ** I eat seafood about once or twice a month {I love shrimp}, I beat myself up about it, and I plan to give up seafood in the next year or so.** *Except I MIGHT allow myself to eat some shrimp TWICE a year, until I die** lol So then I will be a vegetarian that eats shrimp twice a year only.
