Hi,
After a long debate within myself I have decided to go Vegan and I was wondering if there are any Vegans or Vegetarians who can offer some sites,books and things in general I can look into..Also any advice you may have for someone just starting out....Thanks

mya, I stopped eat all meat except occasional seafood {and I hope to stop eating seafood SOON}, about 15 years ago.
I am by no means an expert on vegetarianism, but I have a few suggestions.
 
Vegetarian Times - Great Food, Good Health, Smart Living  wonderful magazine, you can read it online and it is at most libraries, wonderful source of information.
 
I did not stop eating ALL meat at one time.
First, I gave up red meat for a few weeks, then I gave up chicken for a few weeks, then I added all poultry for a few weeks, so I did it in steps.
Once you give up one type of meat, it is easier to add the others.
Please start going to great websites and start reading books on vegetarianism AND learn how to cook delicious recipes that are meatless right away.
 
The main mistake I made was to stop eating meat, and not learn how to cook enough meatless meals.  Also, make sure you plan your sources of protein DAILY, you have to eat and replace the protein you won't get from food.  This is critical to your health and well being, you can't just stop eating meat and NOT PLAN SOURCES of daily protein.
I stopped eating meat and started eating way too many carbs. [sm=ofcourse.gif]
Also, this is a great time for vegetarians, there are so many delicious products out there.
When you are feeling lazy or don't have time to cook {like me 85% of the time}, you can eat morningstar and many meatless, tasty products. 
I could go on and on, and I can email you some recipes and ideas on the other time, if you are interested.

Good luck!  I am on my way out in a few, and I plan to stop at the store and grab some morningstar veggie hotdogs and I love them with canned vegerarian chili, mustard and ketchup.
Chili dogs!  I fix a lot of things with the meat substitutes and you would never know it is not meat.
I can make a fierce 5 layer lasagna with meat substitute!
Last thing is this, do this totally for you and be prepared to live "differently" than most around you.
I have gone to family members to eat, and ended up with a plate of veggies and potatoes.
But ya know what!  I don't miss the meat!

So then I will be a vegetarian that eats shrimp twice a year only.[;)]

I logged back on the computer, just too tell you this.
Don't go over to people's home for dinners etc. hungry unless you know
they will have food that you can/want to eat.
Going vegetarian can be wonderful, but you have to learn to think ahead, and consider
bringing some of your own food.
The world is going to usually continue to eat meat, as far as I know, I am the only member
of my immediate family, friends, co-workers, that does NOT eat meat.
I don't even talk about it, I certainly don't preach.

I find it is OTHER people that notice and ask questions like "You don't eat meat?"
I don't make a big deal out of it, we all have to make choices in life.

 
I am the only one, just like tigger, the wonderful thing about ME, is I am the only one!

I'm not a vegetarian because I love animals, I'm a vegetarian because I hate plants.

HI, I'm a vegetarian have been since feb 96' ...... personally I can't cook so I buy a lot of quorn, or veggie mince, you can pretty much make anything you like with these....to stick to just basic vegetables........you'll grow tired......definatley seek out a health food shop....we have holland and barret not sure where you are -I'm Uk- and they also sell great veggie vitamins  -s-

It can be a decent decision, just.. as a man who's watched a girl he's cared for deeply end up in the IC at a hospital due to taking such a diet too far.. please, keep checks on your health and be prepared to pull away if it's just not working.

Being vegan is much tougher than being  veg and the soy food companies you're used to as a veg don't make it easier.

Pretty much anything from Soy Delicious ice cream to Yves veggie meat is also made in a factory that uses egg and milk product so there's the chance of cross contamination. At least Soy Delicious just lists that it's from a facility that produces dairy however Yves actually has the balls to say that to give an FYI for those who are allergic yet also slaps the Vegan logo on their products and even says in the ingredients "This product is suitable for vegan". Bloody liars.

Seriously, adopting any restrictive diet requires precautions against overdoing it.

Ahhh thanks for the heads up on those products.  Thank goodness I don't buy them, but I am going
to start looking at the ingredients on the back of all the "meatless" products I buy.
When it comes to meat substitutes, I normally only use Morningstar products.
I always add the caveat, I don't eat meat to my knowledge, cause you really don't know what is in most
of the stuff you buy these days or what is was prepared in or next too!

My only advice is try not to be too picky.  I know plenty of  vegetarians who are extremely picky eaters, don't like vegetables, etc.  You can't exist on peanut butter and french fries, you know?  I've been a vegetarian for 11 years, and my theory has always been as long as it doesn't have a pulse, i will consume it willingly.. and if i happen to dislike it, try try again til i do!

Make sure you create a complete protein when you cook - combining certain foods together. Quinoa is a grain that is in and of itself a complete protein and its delicious! (i believe there are 18 amino acids to make a complete protein)  i was a vegetarian for a number of years. i don't eat a lot of meat now, but i do have read meat, i shoot for no more then once a week. i sooooooo wish i liked fish - i have tried salmon so many times because it is healthy for you but i can't stand it [:'(]   i want to like it! i used to make tofu a lot - wonderful food if you get creative with it.   Much cheaper them meat.  Meat is very toxic  cows eat grain thats been sprayed so it's in their bodies in concentrated form which we than consume.  Better off eating the grain the cows eat!  Look at the average japanese (weight wise) compared to the average US citizen and you will have your answer.

i once heard we are the only species that gives our young the milk of another species. Think about it, a cow's calf suckles off its mother and grows up to be an enoromous cow. Our babies, if not breast fed, suckle off cows!  No wonder kids are getting fatter and fatter. When my kids were growing up the doctors told me whole milk for them - i gave them skim milk. i don't want them having a weight problem and always tried to raise them with healthy habits.

Well, I've been a "vegetarian" for years--who also will eat poultry and fish. Definitely not vegan, as I have no problem with dairy.

I was a vegetarian chef for a while, so I'm sorting through my brain trying to abstract principles of good dinners--you don't want to just eat salad endlessly.

Others have offered good ideas above--maybe we should start a recipe thread?

But for what it's worth, when ya gotta have salad, I've found it useful to incorporate some sort of spicy Waldorf salad: lettuce, spinach, other veggies (snap peas, onion, pepper, etc etc etc), fruits (apples, grapes, tomato), nuts (especially walnuts--granola works too), and spices (cinnamon and a "salad-mix" spice, oregano and basil).

With the right mix (according to your tastes), you don't need dressing, and it's a meal in itself.

I was thinking the same thing...

Vegan is about more than food. And what about clothes, shoes, car seats, work chairs, sundries, medicines and scores of other products that use animal
by-products.

Still I have never understood either. The Human animal is an omnivore by design so animal proteins are important. And who is to say Plants don't know they are being cultivated and eaten?

Nope. Not Vegitarian nor vegan... I'm a member of PETA (People Eating Tasty Animals) Having grown up as a farm kid, you learn about the food chain, and stick to it. The thing I can't stand, is how many people eat meat, wear fur, use leather, but aren't willing to kill the animal themselves.

Now, I have been diagnosed with Type II diabetes... and I'm interested in more info on low carb meals... (basically echewing starches, flours, and corn)

When I stopped eating meat(1980),it was always a topic, and a Q&A session,or some kind of to-do.Every meal w/ my dad included him trying to talk me out of it,or to get me to taste something he prepared.Friends would always ask me questions or give me warnings.In a dinning room full of meat eaters,you`re the odd man out and get undo attention.After years, I got very tired of it all.It`s really no one`s business,any more than my choice of toothpaste or TP .

It`s no one`s business if I`m a vegetarian ,either b/c I don`t want to kill animals,or for health reasons,or both(or no reason at all).It`s no one`s business if I don`t eat meat,but wear leather shoes,or use leather collars ;) It`s no one`s business if someone doesn`t use leather or eat meat,for whatever reason.It`s a lifestyle that suites some people very well.Vegetarianism has transformed all cooking,IMO,and has become mainstream.I don`t preach to anyone and I`m just fine if no one worrys about my food.

I was a vegetarian for more than ten years.I rarely eat meat now,but it`s not a big deal, either way.I still hold on to the healthier approach,regarding choices,prep and cooking,that I learned from vegetarianism.Before 1980,I (like most people) saw food as pleasure and not something that served my body and health.
I learned that you can avoid meat,and still eat like a king.

The Moosewood Cookbook is one of my favorites.The book that helped me become a vegetarian is,"The Vegetarian Family".

The author made it really easy to go meatless,and get all the nutrients and sustenance that people need,and more.
She had raised her two boys as vegetarians.One day (at the health-food store)I found out that she lived in town and gave cooking lessons.My g/f and friends learned some great techniques and recipes from her.

A vegan is someone who eats no animal products at all.No flesh, oils,eggs,dairy,soupstock,..nothing.
Some think it`s political or more then just food,but it`s not.
