I toured the King Ranch doen in S. Texas many years ago, and they talked about grilling skirt and flank steaks over the fire way back around the 1900s.

What is known along the Rio Grande and in the US as Pico de Gallo is called Salsa Cruda or Salsa Mexicana Cruda down in Mexico.

I know a LOT about Cocina Mexicana.




whayhay, Traditional Cornish pasties use skirt for the meat, nothing else is good enough.

Yes but...I thought you couldn't dare to east a pastie past that bridge? (can't think of the name) My Cornish pal proudly proclaimed that it's near sacrelidge for pasties to be made or eaten outside of Cornwall.

I like fish.

With any luck, cat will become a popular substitute-it's not like there is any lack of them.

A common enough misconception to even make it into Wiki... Actually fajita means 'band', like a bandage or a belt, and refers to the slicing of whatever type of meat into strips.
The word for 'skirt' is falda. 
And arracheras with lingua, pollo, etc. have been around a lot longer than yuppy Tex-Mex sour cream and pico recipes, which are only distantly related to much real Mexican cuisine...

ramen noodles with a good sesame oil drizzled on them is tasty.  or with oodles of butter and lightly sprinkled with garlic salt ( I prefer the mccormick Calif. garlic salt)
