The crock pot is your best friend...I have 2, a big one and a little one. Use it for soups, chili, scalloped potatoes, pot roasts, spaghetti sauces.....almost anything you bake can be done in a crock pot. Also pasta, but if cooking isn't your favorite thing to do, forget it...it doesn't take long for the pasts to go to mush. Just a note....line your crock pots with those oven bags when you cook in them....no mess clean up! I'm with Asher...do up a pot of food, make serving size meals and freeze the suckers.....I can live for a week on a pot of chili, chicken or vegetable soup. Of course, when I cook, I cook for an Army.....I can't seem to just cook one serving of anything! There really is no shortcut to cheap and healthy. Healthy is scratch cooking where you control what goes in it. Even "healthy" diet food has all sorts of things I wouldn't use to cook with.....preservatives, salt, other things that I can't remember. I'll buy it for work now and again just to have something fast, and to avoid the eating out routine. Bag salads/lettuce is great. I can make my own tossed salads with all sorts of good, fresh veggies, salad dressing and croutons for a week with one big bag, a few tomatoes, cukes, green peppers, celery, carrots.....they also have a smaller single serving bags of lettuce for those that don't eat lots of the stuff, but still want to get some good veggies. You can find all sorts of recipes for healthy meals on-line...use that as a resource. I know the American Diabetes Association has tons of free recipes.....Cooks.com, most any manufacturer of foods anymore has a site for them also. Get rid of things like salt...replace them with different spices....I don't cook with ANY salt....if there's none in the ingredients I use, oh well......you'd be surprised what food really tastes like! When cooking meals for friends, salt is on the table, but most of the time, it's never used. Good luck!
