Here is a very healthy quick meal that I made two nights ago with things out of the cupboard. 2 cloves garlic minced, sauteed in about 3 TBS olive oil for a few seconds then I added about 3 glugs of dry white wine (optional) a can of chopped tomatoes couple shakes of basil because I was too lazy to go to the garden and get some fresh couple shakes of parsley couple shakes of red pepper flakes simmered while I did chores cooked some pasta put the tomato stuff with the pasta stuff, grated some parm cheese on it, voila' Meal for two, and lunch for me twice. Nothing fancy or difficult. All stuff I keep in my cupboards or fridge for just such an occasion. You can add stuff to it like various veggies ( I like to add leftover grilled veggies like zuchini) beef, chicken or seafood. I didn't because I was being lazy. And, it was CHEAP! Very very cheap.
