To answer your question (but hopefully not derail my OP) the more I've learn about animal protein, the more baby steps I've taken to lower my overall consumption over time. Lately, I've seen claims that casein protein poses a larger threat to human health than other animal proteins. Except for a rare organic milkshake (2 or 3 a year) I do not drink milk or use cream. 3 lbs of organic butter a year probably won't hurt me. However, my cheese consumption has been much higher, at about 1/2 lb a week. My meat/poultry/fish consumption totals 3-4 oz per day (about 1.5 lbs per week) with at least half of this being fish. I can see a vegan diet sometime in my future, but I'm not ready to fully commit at this time. But I thought I'd experiment with some healthy substitutes for butter. If I find something I particularly like, I may also substitute it for cheese in many instances.
