My must haves:

Corned Beef (Sunshine can attest to my abilities with a corned beef)
GOOD mashed potatoes
Roasted new potatoes
Properly cooked pasta
Slow cooker roasts
Pizza (hand made crust or store bought)
Cowboy Soup, my father in law makes it, I am going to attempt it. Its one of those things you can mae on a weekend and eat from for the whole week for lunches or quick effortless dinners.

1. That DV... yum... Her food is good too!

2. Potty - get a rice cooker. Much easier. Measure your rice and water, toss it in, turn it on. Forget about it. You can throw veggies and spices in for the last ten minutes, only one dish to cook. (I don't like to cook in those boil in bags. I always imagine the plastic ends up twisting around in my innards).

AND DON'T YOU BE SWEARING ON THIS THREAD, YOUNG LADY. Carry on.

 I didn't swear, I swear I didn't. I used an acronym....not MY fault you know what it means!

I like the rice in a bag because it regulates my intake and keeps me from eating too much.
The only thing I don't like about it is I'm afraid the bag will catch on fire if I don't mush it all down in the water! lol
I was actually thinking about getting a rice cooker tho and that's a good idea, throwing all the veggies in as a meal & forgetting about it as it cooks.

pizza dough from scratch

pasta from scratch

tomatoe sauce from scratch (as it is beneficial for pizza base and for pasta and lasagne etc)

potatoe salad

vegetable soup

Well, since Jeffff dubbed me "The Pancake Lady" i should share my secret recipe.....hee hee!

My daughter's friends always fight to stay over at our house because they LOVE my pancakes. Matter of fact one of the first questions is "Is your Mom gonna make pancakes???"

Hee hee!

Here you go:

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 Tablespoon white sugar
1 1/4 - 1 1/2 cups milk
1 egg
3 Tablespoons butter, melted
1 teaspoon vanilla

In a large bowl or measuring cup (i like something with a spout) sift together the flour, baking powder, salt, and sugar. Make a hole in the middle and pour in the milk, egg, melted butter and mix until smooth. Mix in the vanilla. Let sit for a few minutes to rest. Note****the batter will be a lot thicker than "normal" pancake batter. This is normal and what you want.

Heat your skillet over medium heat, melt a little butter in the skillet, and pour in the batter for each pancake one at a time. Let brown, flip, brown the other side, serve. Note****the heat should be lower than what you use for "normal" pancakes - and you should allow a longer cook time on each side as they will rise a LOT and if you don't cook them long enough they will be raw in the middle. Use the first pancake as your "experimental" pancake - cut it open after it is done and make sure that it is cooked all the way through. Adjust your skillet heat and cooking time accordingly.

Add more butter to the skillet as needed as you cook each pancake. The butter makes a nice "crust" on the pancake (if you don't like the crust, don't use butter).

Serve with butter and syrup of choice. Or just eat them. They're good on their own and often half are gone before they even hit the table.....

Oh, and one last tip - set your bowl or cup on a rag or paper towel in between batter pours to catch the batter drips. Makes for much easier clean-up.

ETA - and i should be clear that real butter is important - no margarine or butter spreads please!

Homemade RiceARoni...(love that stuff!!)

Add the rice, onion, parsley, and broth. Stir mixture, cover tightly, and cook as you would regular rice, approximately 20 minutes. Fluff rice with a fork and serve.

Cooking is one of my specialties, unfortunately it's translated into a minimum weight gain of 20 pounds for every boyfriend I've had.  At 6'2 and 155 though, Master needs a little fattening up! 

tortellini primavera with italian sausage has been a favorite with every boyfriend I have ever had, and it's a quick fix.  It's a great thing too, as I tend to eat low carb, I simply don't add tortellini to my portion, and eat the veggies and sausage alone.  It's just sweet sausage, zucchini, onions and peppers sauteed mixed with the pasta and some red sauce and topped with cheese.

I also think everyone should be able to make a good lasagna and chicken or eggplant parmesan.  A roast chicken with appropriate sides. These are always good for entertaining. Chicken soup is a great staple, and easy to make a lot of on a Sunday to both freeze and sustain for lunches during the week.  A hearty salad is also very appreciated, mine has baby spinach, tomatoes, peppers, strawberries, toasted almonds, raisins, cucumber and cheese with balsamic vin.  Breakfast stuff is good too, french toast and a variety of eggs.

Wowie, Holly!!  That sounds yummy!!  I don't like making Rice-a-Roni out of a box because of all the baaaaad stuff in there, not the least of which is the ton of sodium.

A P&B sammich is a PB&J without the J....  I diabetic and really shouldn't have the jelly.  So I just have peanut butter and butter (margarine if you're so inclined).  Well actually I probably shouldn't have the butter either.  And the bread might also be a problem for diabetics...so maybe just the peanut butter.  Well now that's REALLY not cooking.  I'll just have the peanut butter on celery.

Speaking of celery:  A comedian once said that celery alone could make you starve.  He mentioned that celery has 4 calories per serving, but to actually eat it would require 6-calories of energy to digest it.

VP If I manage to visit you I can teach you the pizza dough or the onioncake (though you might not like onions with my luck) or pancake WITHOUT butter...the recipe I used to use and used to have in my head whilst working in a childrenshome (7 years ago) was somewhat much easier...but I have it in Germany and so I cant jot it down now...
