I think the most important thing to be able to make is a Bechamel. Its the basis for a lot including mousakka to mac n cheese.

BECHAMEL SAUCE

2 tbsp. sweet butter
3 tbsp. flour
1 c. milk
Salt, pepper & nutmeg to taste

1. Melt butter in saucepan. Sprinkle with flour and cook gently, stirring constantly for 5 minutes. Do not let brown.

2. Meanwhile, bring milk to boil. When milk reaches boil, remove butter and flour mixture from heat and pour in the boiling milk all at once. As mixture boils and bubbles, beat in vigorously with wire whisk. When bubbling stops, return pan to medium heat and bring to boil. Season to taste with salt, pepper and nutmeg.

For cheese sauce just add your cheeses to this.

Well I'll be danged!  Norwegians just call this white sauce & put it over anything too garishly colored, such as canned green beans.  *smirk*

lose the salt and pepper and you almost got rommegrot.

Oh gawd, how I loved my Granny's rommegrot!!!  She served it in these beautiful bowls that were white & red glass with bumps.  She also served some sort of red sauce on it.  Scrumptious!!!

klub (krub)

I was reading other members reviews and I noticed that people were having problems with their Klub falling apart. I make Klub several times a year by grinding my potatoes in an old fashioned meat grinder. After grinding potatoes I mix with flour and turn out on board and knead flour into potatoes(just like bread) until it reaches a non-sticky consistancy(usually takes 15 minutes) I use 5 lbs of flour to 10 lbs of potatoes. I then stuff with salt pork and drop into salted boiling water for 2.5 to 3.5 hours. this recipe/technique has been in my family for over 100 years and so far my klub has never fallen apart :) .

anyone who puts sugar on lefse (or cinnamon) or klub is a fuckin heathen and deserves to be shot down like a dog.

Never heard of the Klub, Ron.  Must be from a different part of Norway.  My mother never measured the ingredients for her lefse & made it perfect every time.  I've never had the Lutefisk, since I just can't get past the smell, nor the idea of eating something preserved in lye.

I am not even jewish, and I clean out at least half a jar in one sitting everytime I buy one (which I havent done for years)

Because I only get Gefilte Fish on Shabbos when there is mass quantities of other foods, I tend to only eat one slice.  Last Friday, however, I did eat 2 slices.  It's just so dang good!!!!!

OK, i have always avoided Gefilte Fish because it just looks so ......ew...... but not Jewish here, so never had it served to me! And now i'm dying to know what it tastes like - can you describe it a bit before i go try it for myself? i always thought it would taste like gushy salty tuna fish. Is there a brand on the shelf that's good or is it really something you only eat homemade?

Its sweet. Not salty. Its primarily ground whitefish with onions and maybe some cod. Its mixed with matzoh meal as filler. Its fish meatloaf!
