i like your idea of re-doing the food he already likes. i havent expiremented with any new dishes in a while so that should be fun. and i'm not sure about him eating badly on purpose. on our first date he had ordered 2 full racks of ribs. i'm sure that sounds lovely to some people, but i was amazed and digusted at the same time.

maybe its because i'm still young, but warm creme still puts me to sleep. i just add a few drops of vanilla to it.

I love to cook so it's never been an issue for me to come up with different things to try. And it's a great pleasure to fix declicious meals. [:)] How about setting aside one night a week (for starters) to try something new? Make suggestions, see if you can interest him in helping prepare it. It doesn't have to be anything fancy or exotic. Does he like to grill? Grill some chicken breasts and one or two veggies? If he wants fries, suggest home fries or roasted potatoes.

And the next place to go, is a mexican restaurant [ for more chilli], then maybe a Mexican cookbook. If he likes chilli, he might like curry, but I dont think thats healthy at all. They use lots of ghee [clarified butter]

You would do better making chicken strips that are oven baked instead of fried and the same for the potatoes. Small burgers made of extra lean meat. Serve with whole grains instead of white. If he eats rice, then he'll eat brown rice but he will grumble about it for a couple of months. Oh and many people will eat raw vegetables with a dip but not cooked ones. Make the dip out of yogurt and not sour cream. Beyond that, get him a copy of Eat This, Not That. It will help educate him while allowing him to still eat what he likes.
