My grandfather was Herb with the H.

I use [h]erbs with the h being silent when I cook.

From what i understand, Americans do not pronounce the h and Canadians do. I am not sure on the rest of the world though

Hour, honor, heir, honest all have a silent "h". According to Google, "herb" is pronounced with and without an "h" according to dialect.

It is true because I personally have grown herbs. I have also used herbs in cooking.

herb is a shortening of Herbert, you occasionally get someone herb called erbert, but thats a dropping Haitch cockney(as in you spotty little erbert)
Herbacious is pronounced with an H
Herbivore is pronounced with an H
Herb is pronounced with an H

Sorry coookie, I've been Canadian all my life and I've never pronounced the h. The only people I've ever heard pronounce the h are Americans from the South and people for whom English is a second language (not sure if there really is a difference between those two categories

).
