Both online Merrian-Webster and Oxford dictionaries give both pronunciations.

i can't remember. i've lived on 3 continents and several states in the continents. i THINK i say herb, though, not 'erb.

off topic, how do you say fillet? fill'ay or fill - it

i say it the french way (my midwestern roots?) and EVERYbody over here looks at me blankly till i say it the other way.

None of my southern relatives pronounced the H unless it was a proper name.

What we have here is what Churchill described "Two nations divided  by a common language".

My son is a chef, and he says fill'ay, Ive used it both ways:) specially when shopping for a decent knife
he also says 'erb  basically cos he knows its a pet peeve and he loves it when he can pisses me off.

silent H. It's what I was taught in grammar school, it's what I use. Only people I've ever heard who pronounce the H are from the U.K.

After reading several of the links on the page I posted earlier, that seems to be how it is.

English say the h, we over here do not.

I have never heard them called (h)erbs, the only (h)erb I have ever heard of was on WKRP in Cincinnati.

A potentially interesting thought came to me. There's a store here in town called Herb & Spice. While everybody I know cooks with 'erbs, they buy them at (H)erb and Spice. For some reason the "H" is pronounced in the store name, even by people who don't normally pronounce it.

See, I don't get this, you lot, well some of you over the pond often go on about our spelling of words in our own language, the use of letters that don't appear to do much as regards pronunciation, so you lot leave those letters out.

For example ;

UK : Honour,    US : Honor

etc

Yet in this case, the subject of this thread, you over the pond  have a letter in a word you don't use in pronunciation : h-erb becomes erb.

I always thought that it was pronounced 'erb as in the French pronunciation. But then I thought about all of the French words we Americans bastardize here, chase lounge immediately coming to mind. So I have to think that it's an affectation to set us apart from the British whose colony we once were. Like driving on the right-hand side of the street.

Maybe that's because the Herb and Spice is like Peaches and Herb.  All "reunited" and stuff.
