While not close to the best steaks I've had (or seasoned and grilled myself), I found them (particularly the tri-tip sirloin cuts) to be quite forgiving of beginners (read: overcooked by friends) and good for either baking or broiling. But it's a tad saltier than I'd like and with a taste perhaps more reminiscent of roast beef than steak. One of the best dinners I ever made (besides the pheasant with truffles (got 'em at Maison de la Truffe in Paris)) was in San Jose. We had gone over to the coast after going to Ridge Vineyards, and there was a roadside farmer selling out of the back of his pickup at the road to Pescadero, on the PCH. We bought some beautiful fresh English Peas and artichokes (Pescadero calls itself the artichoke capitol of the world, IIRC) and went back to the apartment. I went up to Palo Alto and bought some amazing dry-aged prime ribeyes at Schaubs, and then went to the greengrocers across the way and picked up some Morels. I sauteed up the morels with the peas, some butter (from Ireland, I think), some sea salt, and a splash of Chassagne-Montrachet Les Chenovettes 96. We had a 93 Vosne-Romanee Les Suchots from Louis Jadot, and a 96 Chateau St. Jean Cinq Cepages (I have a strange memory; I can remember stuff like this, and 16 digit numbers, but forget names.) .
