Personally, Im not real fond of bear meat. It's really greasy and you have to cook it for ages in a crockpot. Head shot with a slug from a 12 gauge. I wouldn't count on it. That skull is really freaking thick. The most reliable way to bring a griz down is a big magnum cartridge shoulder/lung shot from medium (75-250 yards) range. You don't want em up close and personal and a slug isnt much good past 30 yards or so. That's why I laughed at the great white hunter Palin talking about a shotgun for bear. There are a few crazy bastids that actually go after them with a bow and the native Americans of the area actually made special 'bear spears' to hunt them with a spear (now THAT'S fuckin balls).

I know a guy who hunts them with a bow. He was up to 16 the last time we spoke. Spears ??? I've heard of guys using spears and even knives for big boars but for bears would be a new one. Also a shot (gun shot) in the shoulder from the front or side will work because they can't charge you at that point. Then you finish em off. You're correct about a frontal head shot, most likely it would deflect but would work well from the side. Ya can't shoot too low either. A 12 gauge sabot slug will work even out to 50 yards. It may even work better than a 44 magnum. The 44 magnum was at one time the most common handgun cartridge to carry for bear.
