Really, it doesn't have to be that much of a hardship. I've created my own chocolate cake recipe, which does have butter fat and white flour in it, but other than that, is not too terribly unhealthy. I make it about once a month as a treat. Once a week I allow myself pasta or potatoes. I eat red meat 1-2 times a week (of course I love fish and seafood). I eat fruit, but I view it as a carb and a sugar. And I am deadly serious about limiting sugar. Cheese is very high in fat, and I keep it to a minimum, Greek yogurt is my major dairy. (I use it in my chocolate cake as a substitute for buttermilk.) This really is a matter of educating yourself, then shopping and planning well. View it as a challenge, an adventure, a way to test yourself. Do I eat a perfect diet every day? Hell no. But I do *most* days. The Chocolate Cake Recipe 1 cup flour (I use unbleached, not cake flour, it's healthier) 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 stick butter, softened 3/4 cup truvia, the baking blend 3 large eggs - beaten 1/2 cup cocoa 1/2 tsp vanilla 1/2 cup no-fat Greek yogurt 2 oz baking type dark chocolate (unsweetened or semi-sweet) Nuts for topping Preheat over 350 Mix flour, baking soda, baking powder, and salt. Start baking chocolate to melt in a double boiler. Cut up butter into small pieces and cream it into the truvia. Beat in eggs and everything else except the nuts. Beat a few minutes by hand until batter is well blended (don't forget that melting chocolate). Turn onto floured (single size) cake pan -- top with nuts. Bake until toothpick comes back clean, about 35 minutes. This is a great cake that is high in protein !! I eat it for breakfast.
